OK so this might be a bit of a strange post...and maybe a little nosy, but I'm almost useless and boring with planning and cooking and need inspiration for future meals. Its always cottage pie, lasagne, pasta etc

Would be good to carry this on for more ideas as and when people want to share....if you so wish.

Halved red and orange peppers stuffed with red onion, capers, feta, tomatoes, and chilli, drizzled with olive oil and lemon juice, and roasted in the oven.

Last night I made AWT's Lamb Tagine.... slow-cook casserole with a tomato base and pepped up with lots of dried fruit, almonds and aromatic spices. Served with cous-cous.

Spaghetti bolognese, not exciting i'm afraid but the kids plates are always clean when I make it.

Having Thai green curry tonight.

Do you know, it was surprisingly good! Made it for myself and a friend, breaking my cardinal rule in the process ie. 'don't make a new recipe for guests if you haven't tried it out beforehand'. Lamb Tagine

Last night was beef curry with spinach, red peppers and tomatoes.

Tonight - we've not eaten yet, waiting for DH to come home - we're eating spaghetti in a tomato sauce made with fresh tomatoes, canned tomatoes, pancetta, loads of garlic, mixed herbs and black olives (and a pinch of chilli), all slow-cooked over several hours and now smelling heavenly!

I did this with chicken thighs, added black olives to boost flavour.

I do lamb tagine but its too spicy for DS1. Using Hugh F W recipe that is uses with chicken but works very well with lamb.

Ham & cheese tortelloni together with plain penne pasta (I can't eat too much of the stuffed pasta) in home made herby tomato sauce, topped with wilted spinach and grated cheddar and parmesan and baked in the oven.

well.. there are loads of variations, but mine had diced potatoes, chopped green olives, chopped up chicken, green beans, hard boiled eggs and lots of mayonaise.

Just made another big dish of it with tuna instead of chicken.. I love that stuff :o Blush

Some fab ideas here. Thanks ladies. Tbh I'm not very good at using herbs and spices so my cooking is very plain and boring.

Tonight we had frozen chicken kievs with cheesy mash, mushrooms and beans. Exciting huh??? ( though it was yummy)

Oooh, I have the same dilema sparkleshine, I'm getting very bored of cooking the same things! I'm going to put this thread on watch! We had fish fingers and waffles this evening but usually its home cooked stuff.

2 'different' dishes I made this week were Garlic Chicken (water, 1-2 chicken or vegetable stock cubes (the stock should be watery), a couple of cloves of garlic, some dried corriander, 2 chicken breasts, some carrots, some green beans, some mushrooms - simmer it all for about an hour, top up the water if need be and serve with tagliatelle or rice) and Gnocci in a homemade tomato and basil sauce, topped with mozarella and served with salad, crusty bread and some garlic doughballs.

Leftover pie is a good one in our house too, if we've had a roast dinner I'll cook up the leftovers in some oil with some onions, add some gravy and stick a pastry crust on top - DH loves it (and the children don't so they get to have macaroni cheese Grin)

I always struggle with new dishes as I don't eat (and never have eaten) meat so I have no idea if what I'm cooking tastes nice or not!

mmm that garlic chicken looks yummy...will have to try that, though will swap green beans for onions and/or sweetcorn.

I think a lot of meals you could make up yourself...I just have no imagination.

I can do an ok chicken casserole though. Need more one pot ideas as well.

For DS, I make up batches of veg soup to freeze for nursery but it doesn't look or smell nice. Just do it for the good vitamins.

Anyone else?

I used to be quite a good cook but have got so boring (and bored ) with it Only make lasagnes, mince etc these days and never any extras to go along with them. Must make more effort
