4 bananas going (gone...) black - what can I do with them?

I keep having disasters with banana bread - it's all uncooked in the middle despite ages in the oven.
Any other ideas?

Slice them up and freeze them while you decide what to do next.
Might you consider changing banana bread recipe? I have a pretty foolproof delia one.

Should add - it's just me in the house! DH works away. I have a DS who eats bananas intermittently (hence them going black) but wouldn't have a milkshake. I assume.
Can you freeze them??

Katisha would consider a foolproof banana bread recipe! I've used John Barrowman's recipe (seriously - looks goods, sings and makes banana bread!) but whilst I've had fabulous results, I've had many undercooked versions too. No idea why though.

YEs you can freeze them - came as a surprise to me as well.Peel them, and then slice into a freezer bag.
Hang on while I look for my delia recipe.

Yeah, I don't know what I'm doing wrong with the banana bread - maybe step 1 is fix that particular problem.

I use a silicone loaf tin - would that make a difference?

Have made it tons of times, always fine. I quite often leave it in for longer as DH likes it quite dry. I don't tend to bother with the walnuts, and only rarely bother with the lemon/orange - still seems to work fine.

mash it and freeze it then eat it like ice cream....it's nicer than it sounds.

Are you sure it's not the same John Barrowman? I tried to find a different one with no luck! (random tangent sorry).
My banana bread is often undercooked in the middle so I'm watching here too :)

I too have some bananas going black on the cake stand that is my fruit bowl.

I use this one. It's lovely if you use muscovado sugar. It's a vegan one but should also work if you swapped the soya milk+vinegar for buttermilk or yoghurt. I split it between 2 loaf pans to avoid the problem of being uncooked in the middle.

Those silicon tins do that to me with cakes too - I have gone back to a standard tin one after endless runny-in-the-middle-burnt-on-the-outside cakes.

And the Delia recipe is v.good.

DS had mashed (black) banana in custard today, yummy. I have a weight watchers recipe that NEVER fails....hang on.......

makes a sliceable loaf

75g butter (plus some to grease loaf tin)
75g sugar
1 tbsp honey OR 1 tbsp sugar
......................cream together until light and fluffy

2 eggs beaten
......................add to creamed mixture gradually beating all the time

200g SR Flour (
1/4 tsp bicarb of soda
......................sift and stir gently into creamed mixture

2 ripe bananas mashed
100g sultanas (optional)
......................stir in.

Gas Mark 4, 1 hour or until cooked through. Cool on wire cooling rack. Best eaten next day, can be frozen.

if you freeze bananas they go white again inside when defrosted and are good for cooking

peerie now I'm wondering whether it is the same one - but he has loads of recipes on that BBC site. Maybe he just is completely talented. Seems like a pleasant bloke too.

jamais I will see how this one turns out. If it's runny in the middle, then I will give the next batch a try in a normal tin. I will overcome my banana bread disability!

in Welsh, at least in my dialect, there is a specific word for a cake which is slightly undercooked in the middle. Great word too.

My way of getting round the soggy middle of a banana loaf problem was to split the amount between two tins. Voila! Twas yummy.
