Halloumi? what do I do with it?

Firstly I should say I adore cheese, of any sort except sheeps.
DH seldom goes shopping, a couple of evenings ago, I asked him to go to the supermarket and get a litre of milk and some fags for me.
He came back with both and olives, tara and some halloumi. I asked him why and he said it looked 'pretty'Hmm
I've got 250g of it in the fridge and no idea what to do with it. I am not sure if this is right, but the use by date is in October 2011.

slice it and fry it...dry fry in a hot pan

toss over salad or roast veg with a lovely lemony herby dressing. or just scoff.

I slice it & fry it in a griddle pan. It's a sort of meaty cheese, IYSWIM. It's quite nice on its own, perhaps with a bit of lemon juice & pepper. Or melted over big mushrooms. & if you want, you can put the mushrooms & halloumi in a ciabatta bun, like a burger, with all the juices running out... Oh, I'm so hungry now Envy

It's delicious. You can grill it as well as fry it. Put some herbs on it. Mix it with a salad. Eat it on its own. I could eat tonnes of the stuff. Lucky you.

fry it in slices

serve with chickpeas dressed in a garlicy dressing with some chopped herbs of some description. And salad.

or make kebabs?

Hmm fried with lemon juice. Stuffed in a pitta with salad and Lountza (Cypriot pork loin, bit like Canadian bacon)

Put it on skewers with sweet potato.

Or have it with salad- lemon juice somewhere in the mix is a must.

ditto, grilled it is absolutely delish, chewy and nutty. Really yummy. Alternatively you can cube it and grill it until it's golden and then add to a plain tomato pasta sauce.

Or do some roasted veg (peppers, mushrooms, onions, courgettes, etc) and about 10 mins before they are ready, add chunks of halloumi to the pan and put back in hot oven.

Really good with salad or pasta, or both.

I roast the veg with some oil & balsamic drizzled over them, and if you also put some halved tomatoes in there you get some lovely roasting juices that the halloumi sort of soaks up.

I'm hungry now too Grin

I was just coming back to say what Paisleyleaf said. If it's a halfway decent brand it's made from Sheep milk (and occasionally goat)

Halloumi doesn't melt, so grilling it brings out the best in it. In fact, given its very long shelf life, which is standard for halloumi, you could bring it out in the summer if you have a barbecue. And in summer it's also gorgeous eaten with watermelon.

But it's also lovely in toasted sandwiches with ham and tomatoes, especially if the bread has sesame seeds on it.

I love cubes of grilled halloumi floating in a spicy/smoked paprika-ey/garlicky tomato soup with peppers and chick peas and stuff...bit like a chewy cheese crouton! The heat of the soup helps it stay soft and squeeky...oh yes...mmmm

It does very well in a hot oven too...

I love it too, especially with prawns and peppers on the bbq with lime zest, garlic and evoo. Yummy!

Aaah...but did you fry until it browned in places??! HAS to be a bit browned - not just heated through otherwise it sucks the joy out of it. Squeaky-loveliness indeed!

Try again if not!

And in case you then decide its for you....

Thin slices.
Fry in little olive oil (helps it brown)
Then take out halloumi, bung in pan some EVOO, garlic and chilli and fry for min or so. Then use as dressing.

Also yum with capers, lime, EVOO and lots of coriander

Halloumi, jar of artichokes, coriander/mint and cous cous is yum too. With a bit of griddled meat or whatever.

I love it and agree that it's quite 'meaty' - as a veggie. I find that halloumi and paneer are great for giving a chewy texture that is missing from a lot of veggie food.

I like it fried, then sprinkled with lemon juice and chopped red chilli and served with baby spinach, red onions and new potatoes.

When I lived in Cyprus we had halloumi all the time [wistful emoticon!]. The locals (in the cafe that I worked at anyway) would grill it on a piece of tin foil until it browned. The grill seems to almost catch alight, but that's normal. Bacon and halloumi sandwich. Yum! Also lovely to have halloumi wrapped in bacon on a BBQ. Rinse it before slicing to get some of the saltiness off.
