Something different with leeks...

Any ideas please?

We often do cheesy leeks, leeks and butter beans in a kind of gratin, just done in the frying pan with butter with garlic/pepper...

What else? As an accompaniment to Chicken tonight.. they are medium sized, too large to do whole.

I have bloody millions to eat in the next few weeks, so all ideas gratefully received.

Is it a whole chicken? We sometimes cut them into rounds and just chuck them under and around the chicken so they cook in the juices from the chook. Theres also leek and potato soup...

Leek risotto is lovely as a side dish. Mmmm.. thinking about it is making my mouth water!

DH made a pizza with leeks on the other night.

He used pesto as the tomato paste (using a ready-made pizza base), mozzerella cheese (normally we grate cheddar but it was reduced), sliced onion, mushrooms and sliced leeks.

It was really nice (although he used too much leek!)

Braised Leeks are lovely...

I do mine like this
Trim/wash leeks, and cut into large pieces (3 per leek say)

Heat some oil in a pan, and colour the leeks.
Pour in a good glass of wine, a couple of cloves of garlic halved and some herbs (tarragon works really well). Reduce the wine until almost all gone. Pour in some stock (chicken or veg) up to about half way up the leeks. Cover with a circle of baking parchment and cook in oven (gas 6 ish) for 20 - 30 mins depending how soft you like your leeks.

Slice them on the diagonal, about 4mm thick, then fry till nicely soft and charred, in olive oil with some chilli flakes and lots of black pepper.

I roast them as well, with peppers, courgettes and onions.

Do they have to be used tonight? You could use the chicken carcass tomorrow to do a lovely chicken & leek broth/soup for lunch.
I put the chicken carcass in my slow cooker with leeks, carrots, peas, baby corn, some chopped bacon etc and about a litre of chicken stock and cook on low for 5-6 hours. I then fish out the bones & serve the broth with lots of crusty bread. Yummy.

I sometimes just slice them into bitesize chunks and panfry with butter, add white wine and let reduce, add cream, salt pepper to taste

Crikey what an array of ideas! Thanks. Going to make a note of these and use Up all my leeks with these over the next few weeks.

I have so many leeks in the ground, enough to do with the chicken during the chicken and after the chicken IYSWIM!

We eat quite a lot of "cheesy-leek-pasta". Fry leeks and garlic in a little butter, chuck in a handful of frozen peas and a little white wine or chicken stock. Stir in cream/creme fraiche. Mix with pasta and sprinkle with cheese. Very nice.

But we did get a bit bored with it in the end, and tonight I am making this: cheesy leek and potato pie

Fab casserole.

Diced lamb , brown and add to pot, add big chunks of leek, tinned tomatoes, big spoon of redcurrant jelly and lots of mint. Season.

Tuna and leek bake. Cook leeks, add tuna, add cooked rice, add condensed mushroom soup and a bit of milk to stop it going too dry. Tip with grated cheese. Bake. Probably not as delicious as some of the ideas here but possibly a little lower in fat than those with butter, cream etc....

gently fry with some butter and pepper and put on top of steak.

Or there is always leek soup, basically french onion soup with leeks, tis quite nice

Slice them into "discs", cook in a little butter with a couple of chopped cloves until soft and pour a tin of chopped tomatoes with Herbs over the top. Give a good stir. Great serve with pork chops and basmati rice.
