dh bought a load when we were at the supermarket in France recently. I've got to use it soon so I'm looking for some quick and easy meal ideas for using it up.

This is quick and delish (cod with tomato and chorizo sauce).

You can also roast chicken pieces in a Mediterranean-type stew and add them to that.

storminabuttercup · 03/01/2011 19:51

add to pasta and tomato sauce?

WhatsWrongWithYou · 03/01/2011 19:52

Here - has chickpeas as well.

kennythekangaroo · 03/01/2011 19:52

Jambalaya - nice recipe on (whispers) netmums.

WhatsWrongWithYou · 03/01/2011 19:53

Cassoulet.

roundthehouses · 03/01/2011 19:57

OMG add it to anything! lol I love the stuff. Add it to a simple tomato sauce and eat with pasta. Or really delicious is mushrooms, onions, peppers, chorizo all cooked up together and then generous with the cream or creme fraiche - over pasta. YUM!

Dh (spanish) also adds a big chunk of chorizo to his chicken stock which adds a yummy flavour.

A tapas dish is chorizo in red wine which I gather is basically that. You could do a tapas night and make up some other plates - mushrooms in garlic, prawn in garlic, etc with some nice bread.

Or hell just cut it up and chuck it on some bread, in a salad etc.

droooolll.. am 33 weeks pregnant and counting the days til i can eat cured meats again my baby is here Wink

I don't think it's terribly good chorizo because we tried it just cut up and it wasn't good. That's why I thought cooking it would help. I've had the good stuff before so I know it should taste better than it did.

I've seen on another thread the Nigella chicken and chorizo roasty thing... I've got the Kitchen book so I might check that out. Thing is I want to keep meals a bit cheap for a bit, stoney broke, so I think adding it to chicken is probably the best bet, prawns, duck legs and saffron are off the menu for a while.

I do a river cottage spicy bean stew which looks like that cassoulet recipe but prob cheaper as no duck. Its just sausages, onion, kidney beans, haricot beans and tinned toms and then spices - nutmeg, cinnamon, cloves, paprika. You could chuck some in that and it would be really nice.

roundthehouses · 03/01/2011 20:11

also delia has a chorizo and bean soup.. i could post it probably if you can´t find it but like the sound of it.

I am really hungry now! Grin

Chicken & chorizo casserole, chicken pieces/left overs, passata or chopped toms, chicken stock, chorizo & I like to add creme fraiche at the end. Lovely and can be served with pasta, rice or potatoes.

HalleLouja · 03/01/2011 20:17

Jamie Oliver (from the Ministry of Food book) has a chorizo with sweet pot / butternut squash soup which is lush.

I would also cook with red wine and serve tapas style with bread.

Curly kale warmed with almonds and garlic. Was on tonight cooking show can't remember which one. Or jumbalia sp?)

blinder · 03/01/2011 20:28

Slice through and de-stone a date. Push a stone sized lump of chorizo into the hole. Wrap in thin streaky bacon and secure with a cocktail stick. Bake for 20 mins.

Sweet, salty, soft, chewy, crunchy, melty mouthfuls of heaven.

You're welcome Grin!

Quick snack, fry chorizo and gnocchi together. No oil, enough in chorizo, nicest snack ever.

piprabbit · 03/01/2011 21:30

Nigel Slater did a nice-looking recipe on TV tonight:
Fry off the chorizo until golden - remove from pan.
Fry some whole almonds in the same pan until they too are golden - remove from pan.
Fry some garlic in extra oil in the pan.
Add some green kale and heat in garlicky oil until darker and softer.
Stir back in the chorizo and almonds and eat.
