Suggestions for a high protein lunches

wrenster · 21/01/2014 12:45

Im rather bored of my tuna salad / chicken salad / soup with tuna / prawns / pilchards. Can anyone suggest any different healthy lunches?

I'm upping my training and I'm already quite little so don't want to lose anymore weight, just become stronger and fitter. HIIT is my new focus!

So any protein lunches or snacks which you would recommend?

Do you like eggs or mushrooms? I snack on nuts and pumpkin seeds to boost my protein intake.

wrenster · 21/01/2014 12:59

Love mushrooms but not that keen on egg.

Any particular nuts?

I love cashews but they're all pretty high in protein. If you google vegetarian protein then there are loads of other alternatives.

A grilled portabello mushroom with a bit of cream cheese and garlic stuffed inside is lush.

Wow, that sounds amazing, just the kind of thing I like! Thanks

Hummus made with extra nut butter in place of the tahini and raw veg dippers (depending how low carb you're aiming for). I made some flax seed crackers once which were a bit of a faff, but were delicious. I think this was the recipe (roll out between two sheets of cling film)

Bump for any other suggestions?

Or make mini pastry free quiches in muffin tray with chopped ham, sausage, veg leftovers

fish tacos? any cheap white ethically acceptable fish with a citrusy sort of shredded cabbage slaw, fresh coriander etc in a soft taco/wrap

tuna mashed into avocado is nice although you said you were sick of tuna, in a wrap with salad or just on its own?

what about some sort of kisir type thing - bulgar wheat or couscous with chickpeas and cucumber and tomato and lemon juice and olive oil and black pepper and fresh parsley and tomato paste?

and you could do something similar with quinoa and butternut squash and feta and beetroot (this is one of my favourite meals hot but although colourful to look at it's very bland)

TrucksAndDinosaurs · 21/01/2014 22:36

Lamb kofte, teriyaki salmon/beef/pork/chicken skewers with red pepper and mushroom threaded on skewer too?
Chicken satay?

Mitchy1nge · 21/01/2014 22:39

ah if skewers are involved I offer you chunks of tofu and aubergine and red pepper, brushed with chermoula and olive oil then grilled on each side

with a salad

am making self hungry

wrenster · 22/01/2014 06:54

Great suggestions, thanks very much. They all sound the kind of thing I would enjoy.

With quinoa I have a packet in the cupboard but I have no idea what to actually do with it! Can anyone tell me what it tastes like? Similarly what does tofu taste like?

Think I might do some kebabs today and mushrooms tomorrow and then work through the list.

Much appreciated.

You simmer one cup of quinoa with two cups of water and just let the quinoa absorb the water until you see the seeds have a white ring. I usually add a vegetable stock cube to the water to add flavour, as sometimes it can be quite bitter. Then I usually add some chopped asparagus, roasted beetroot, peas, cooked mushrooms and chopped parsley.

conquita · 22/01/2014 09:15

oh and with Tofu, I prefer the harder type. You can chop it up into squares and fry it in sesame oil or fry it and add a little curry powder - it is great as a snack.

dotty2 · 22/01/2014 10:25

Tofu basically doesn't taste of anything, but is good at carrying other flavours, so good in a spicy stir fry etc.

Sleepwhenidie · 22/01/2014 13:10

Get a pack of merchant gourmet healthy grains. (Quinoa/bulgur), add chopped mint and parsley, pomegranate seeds, cherry tomatoes, spring onion and feta, dress with 50:50 lemon juice and good olive oil and seasoning.

Cannellini beans with tuna, parsley, cucumber, cherry toms. avocado, capers and black olives, lemon and olive oil again is good (add hard boiled egg for extra protein).

My version of huevos rancheros- wheat free flat bread , salsa , guacamole, roast chicken or tuna and cheese grated on top, under grill to melt cheese (again, an egg, poached/fried/hard boiled optional).

Mitchy1nge · 22/01/2014 13:14

but how will it be huevos without an egg! Grin

Sleepwhenidie · 22/01/2014 14:56

I did say my version Mitchy Grin - I have egg but OP doesn't sound keen!

wrenster · 23/01/2014 13:25

Thanks all, I have got a weeks worth of lunches now!

I love the sound of your huevos sleepwhenidie as you're right I'm not keen on egg.

I'm going to give quinoa a go too and add a few veggies like you mentioned conquita.

Kebabs for lunch today which were fab.

Thanks everyone
