Relative not eating properly

My lovely FIL aged 80 is recently bereaved, and historically MIL had done all the cooking - I mean everything. FIL isnt really what I’d call a good eater, but he just doesnt / won’t make himself any meals.
It’s a lack of knowledge, lack of interest but also a lack of willingness to learn any simple receipes or even try to put a meal together.
I’m at my wits end, he will only make sandwiches for himself. We invite him over twice a week and he says how good the food is, how he likes home cooked food etc, how he’s not had any hot food etc.
He’s active, has interests and gets out and about every day so I don’t think meals on wheels is appropriate (as he’s put a lot). When he’s got ready meals he just let them go out of date, just literally can’t be bothered to cook them.
I work FT, as does DH. I can’t take responsibility for feeding him, but also he can’t exist on Bread. He was just so used to to MIL making all his food. I’ve tried suggesting buying chicken breasts and pre prepared veg, making simple pasta meals but it all falls on deaf ears.
Does anyone have any experience or suggestions please, or do I just leave him to it?

Does he like tuna? There are tuna pasta pots you can get which don’t have to be heated up and are long life. DS uses them on weekend hikes with scouts and DofE

How about this book ? It was written by a daughter whose mother died and whose father (once he had exhausted casseroles from neighbours) needed to learn the basics. Maybe you could work through it with him ?

Thanks everyone, He does like sweet things so, custard & tinned fruit are a good option I think. I don’t actually know about tuna, but yes those pots might be a good idea for him too, I’ll ask him about tuna.
I have been trying to encourage him to go our local Morrison’s for lunch a bit more too.
Thanks everyone who’s responded, I’ve realised it’s still early days and maybe the lack of vitamins etc At his age isn’t as dire as I thought.

Hi - just to say I'd focus on calories, if he's eating something that's good. There are some fortified juices available that pack in both calories and vitamins if you wanted to look at those.

As he likes going out would he consider joining a lunch club, my dad goes to one of these they do hot meals twice a week? Might be something like that in his area

Also what about he could have a shopping delivery with things like Quiches, pies, things to go with it such as salad etc, maybe he has a local shop and can pick up things there also.

It sounds like motivation as well, maybe that will come back with time.
