Can anybody think of a nice, celebratory, vegetarian main course that I can do on Boxing day?

...so is either fairly fuss-free or can be done well in advance?
Last year I did HFW's stuffed BN squash and it was lovely after all that meatiness the day before. Looked good, too (I could almost carve it!) I could do it again but was hoping there might be something in a similar vein that I could ring the changes with? Have bought three food magazines now, all of which claimed to have great vegetarian suggestions - none of which actually did.

Veeeeery tasty. You could make it in advance and whack it out of the freezer on the day itself?

Vegetarian Nut Wellington? Can be made in advance and put in oven when required. Also goes well with festive trimmings.

I freeze everything, as long as it's cooked beforehand it should be OK...

Vegetarian Nut Wellington

12oz puff pastry (can be bought ready-made)
1 onion
2 cloves garlic
oil
4oz walnuts
4oz cashew nuts
6oz chestnut puree (you can usually buy it in supermarkets at this time of year).
1 heaped teaspoon paprika
1 heaped teaspoon oregano
2 tablespoons lemon juice
2 eggs
2oz mushrooms (sliced)

Preheat the oven to gas mark 7 (or equivalent). Peel and chop the onions and garlic, and fry them in the oil until soft, then place them in a bowl with the nuts, chestnut puree, paprika, oregano, lemon juice and eggs. Mix well.

Roll out the pastry and line a loaf tin with it. Put the mushrooms in the pastry case, then add the mixture from the bowl. Fold the sides of the pastry over, and seal with beaten egg. Turn out onto a greased baking tray, and make cuts in the top (for the steam to escape). Bake for 1 hour, turning the oven down halfway through to gas mark 5 or equivalent.

That looks good, thank you! Though walnuts are the stuff of the devil so I'd have to miss them out

Ooh the Moroccan one looks nice too - but I dont' want to be fiddling with filo on BD morning, do you think it would freeze? (Pistachios are nearly as bad as walnuts, will miss them out too. In fact, for reference, all nuts that are not pea or cashew can be considerd the devil's work.)

You could put in extra cashews or some other nut of your choice instead of the walnuts!

Yummy & easy pastry:

Roll out 2 rectangles of puff pastry
Spread with goats cheese/cream cheese
Top with sliced figs & more goats cheese
drizzle with honey
cook in the oven gas mark 5 (i think) for 25 mins (I think!) or until it looks cooked!
