How do you do your sprouts? Looking for ideas

Tired of boring sprouts so am looking for ideas. How do you do yours?
We don't eat bacon...I know that's often done with sprouts?
I don't have any chestnuts. I'll need to use whatever else I have in (extensive spices condiments and stuff)

Honestly I just boil them and eat them plain. However I love sprouts so enjoy them like this.

I’ll watch this threads for some fancy ideas for future.

I would roast them in a tray with loads of salt and pepper. Or shred them and fry in a pan with butter.

Roasted sprouts with thyme and honey are delicious
halve them and they go crispy when you cook them
add a splash of water as well

SIL done them fried in butter and a bit of lemon , just halved them first.

Is there a way of cooking them that doesn't allow their delightful aroma to escape? I'm a big sprout fan and couldn't help buy a big bag of them when they were 5p in Lidl, but my DP is a brassica hater who finds the smell genuinely vomit-worthy. Is there a way to cook them that keeps the smell in?

I thought oven roasting them and topping the dish with a lid of bacon might seal in the smell a bit?

I had some lovely spicy ones at a dinner last week, but for Christmas day they'll be steamed and served plain. No need to make things more complicated.

My sprouts have been on a gentle simmer since mid November.

By my calculations they'll be the perfect strength of al dente by lunchtime tomorrow.

Cut each sprout in half and roast in the oven with olive oil and salt & pepper. Sometimes I grate some Parmesan cheese on them for the last 5 minutes of cooking (cook for 20 minutes + 5 minutes).

If I’m pushed for oven space, I do them on the hob, halve each sprout cook in a knob of butter, season with salt and pepper, keep adding a couple of tablespoons of water as you cook them. Takes about 20 minutes.

Boil, add a bit of garlic butter, sea salt and pepper, eat.

Halve them and roast them with pancetta and lots of black pepper in this house. And you have to let them roast until they look almost burned to get a lovely deep flavor.

If you arent a fan of bacon, try duck fat or olive oil (but then add lots of salt).

Shredded and cooked in copious amounts of butter with bacon 🤤 the only way we’ll eat them 🤣

I slice and wrap completely in foil with a little sprinkle of water, a knob of butter, a little dill (dried is fine) chopped chestnuts and smoked bacon lardons (always smoked).Pop in the oven on a tin or tray. Takes 20 - 30 mins

Sometimes I use the same recipe, but use a frying pan on the hob with a lid. Heat up nicely first, then turn down the heat to low. I check to ensure they are cooking through nicely, adjusting the heat sometimes depending on how quickly I want them to be ready.

If I don’t have lardons, I chop up a couple rashes of smoked bacon.

Doesn't really go with Christmas roasts, but maybe for boxing day leftovers/ham or similar, DP shreds them and fries with oyster sauce and some Chinese style spices (never been too sure what exactly!). That's lovely.

I do them with lemon zest, crunchy breadcrumbs, garlic, herbs and parmesan with a roast, although more often pancetta and chestnuts at Christmas.

If you have cranberries, that can also work in the above.

Not a suggestion to accompany a roast dinner, but I like sprouts raw in salad (the small ones at the top of a sprout stalk are especially sweet and delicious (and often just scoffed by me during preparation - cook's perk). Slice v. Thinly then cut the slices in half. Treat more or like cabbage. Christmassy coleslaws, with lemon, olive oil and fennel etc. They go well with walnuts and hazelnuts.

Halve them and cook in butter with roasted chestnuts and caramelised pecans. I always get happy reviews and requests for this and it's really simple if you buy the chestnuts roasted and nuts already caramelised.

Garlic and double cream. Make them into a gratin.
I also make a leek and kale gratin with goats cheese and cheddar, that would be good with sprouts I reckon.
