How do you do your sprouts? Looking for ideas

Tired of boring sprouts so am looking for ideas. How do you do yours?
We don't eat bacon...I know that's often done with sprouts?
I don't have any chestnuts. I'll need to use whatever else I have in (extensive spices condiments and stuff)

Halved and roasted with honey and balsamic vinegar

But `I also like them boiled with some butter and a shedload of black pepper

I'm doing both versions tomorrow, I think.

Wow some great deas, I'm taken with the gratin idea, also the lemon zest breadcrumbs and parmesan idea, that sounds lovely

Parboil them, then roast them in the oven with smoked bacon lardons and cream. Bung them in there for 20mins with foil on top to keep in the steam and voila. Yummy 😋

Roasted with bacon and chestnuts

Shred and fry, or roast - I’ve bought ‘too many’ sprout (no such thing!) so I can do those after Xmas. For Xmas we do what is irrelevant to you - boil til al dente, bacon, chestnuts. Nothing worse than a soggy sprout though!

EllaPaella · 24/12/2025 13:08

Lightly sauté them in some butter and then add in pancetta (already fried separately). Salt, pepper and a spoonful of parmesan over the top and roast for 20 mins. Delish.

I always buy frozen ones as I think they're the tastiest and just steam them. Dh and I love them and eat them all year.

Doesn't really go with Christmas roasts, but maybe for boxing day leftovers/ham or similar, DP shreds them and fries with oyster sauce and some Chinese style spices (never been too sure what exactly!). That's lovely.

I do them with lemon zest, crunchy breadcrumbs, garlic, herbs and parmesan with a roast, although more often pancetta and chestnuts at Christmas.

If you have cranberries, that can also work in the above.

Ooh, some lovely ideas I haven’t tried before, thanks ! Though I do make a savoury crumble which is similar to one of your suggestions.

Stir fried with chestnuts, bacon and chilli

We like Marmite sprouts.
Put the sprouts in a pan, add a big knob of butter, half a teaspoon of Marmite and an inch or two of water. Cook until the water has evaporated.

MetrioFrappe · 24/12/2025 17:43

I love them boiled & plain.

Ottolenghi has a great recipe with sprouts & black garlic. These have been a hit when I’ve made them for guests.

Aussiegold · 24/12/2025 17:47

Boil, then toss in butter and a bit of marmite. Gives a nice umami flavour.

BangingOn · 24/12/2025 17:48

We had our Christmas dinner today, I air fried them and served with brown butter and roasted garlic.

That sounds amazing!

I saw a lovely recipe online this week where sprouts were incorporated half and half with cauliflower in a cauliflower cheese.
If I hadn't already made my cauliflower cheese I would have added some cranberries and tried this.

GiggleWiggle246 · 24/12/2025 19:45

I do mine with turkey bacon if that’s an option for you? I usually grab the sprout packet thing that’s around this time of year, chuck some butter in a pan with the packet, halved sprouts and chopped up turkey bacon. My kids even love it!

IridiumSky · 25/12/2025 11:28

Follow Edward Lear’s recipe for Amblongus pie, but substitute 4lbs of Brussels sprouts for the amblongusses.

It’s important to follow it precisely, especially the final stage: ‘Serve up in a clean dish, and throw the whole out of the window as fast as possible.’

Happy Christmas!

Not really for Christmas but I air fry them with harissa, olive oil and halloumi then mix in baby spinach and lemon juice just before serving. Doesn’t smell at all
