Braised red cabbage. How do you do it?

I've seen so many different recipes.

I like the idea of using apples and potentially cranberries instead of sugar.

Don't know how I feel about adding onion?

Every recipe has a different variation of ingredients, bit overwhelming. But I want to find the perfect, tried and tested fail proof recipe.

Would anyone like to give me their take on Braised red cabbage?

We usually do Delia’s recipe and I prefer this to an alternative we tried which had junipers and no apple.

She uses cooking apples, onions, garlic, sugar and vinegar as well as spices and seasoning. It’s only 3 tablespoons of sugar with 900g of red cabbage.

You can make it in advance and freeze it.

Delia’s recipe here, too. It freezes and reheats beautifully. I make sure the onion pieces are very small and always cook it at least 30 minutes longer than she says, because I like it to go a uniform shade of purple all over!

You can't just use cranberries instead of sugar as the cranberries need a load of sugar to make them edible unfortunately.

Crabapple jelly or Ribena work well.

It's about the only Delia recipe I don't like.

Delias recipe in the slow cooker.
most of the time I don’t use onion as I can’t be arsed to chop them.
if it looks a bit dry I will put in apple juice
im very loosey-goosey with the recipe

We don’t use onions. Apple and raisins sugar and vinegar.

Got my recipe from an elderly Viennese woman back in the late 1960s when nobody had heard of braised red cabbage. Onion, garlic, cooking apples, juniper berries, the sweet element from redcurrant jelly stirred in at the end.

Delia red cabbage here too. I make it in the slow cooker and use a Schwartz mulled wine sachet in place of the spices (2 if it’s an extra big cabbage) for a more subtle flavour. I halve tbe amount of sugar but that’s my taste.
I freeze what I need for Christmas Day and then smaller portions to go with future roast dinners.

I do
slow cooker
grated apple
cranberries
brown sugar, maybe a flat desert spoon,
glug of balsamic vinegar
glug of apple cider vinegar
cinnamon and nutmeg and black pepper

turn on and cook all day Xmas eve.

lovely Cold on Boxing Day as well with cheese

I’m a good cook. But I moved out at 17, so I just can’t be arsed anymore. If there’s a shortcut. I’m doing it.
I bought a small multicooker in Lakeland. It’s great, it does rice as well. I use the little slow cooker for porridge, rice pudding, any sides, jams and chutneys. Anything I can make and ignore!

the red cabbage I literally slice it up with a peeler thing and throw it all in and ignore it

If you can be bothered, would you write out a mini overview of how you do it? Id love a traditional Viennese recipe!

The mulled wine sachet is a good tip. Saves buying spices I would only use for this one recipe potentially.

I do equal parts water & red wine vinegar in a pan and half as much sugar (so 1 large cabbage I'd do 1 cup water, 1 cup vinegar, 1/2 cup sugar) some salt & pepper, pinch of cinnamon (or stick if you have it), throw some raisin's in, give it a good stir let it simmer covered with some greaseproof paper for about half an hour - add any extra salt & pepper to taste. Have had no problem reheating it from the fridge or freezer.

Super easy & tastes great - if you want to dial down the sugar makes no real difference.

Delia recipe is good but I prefer the above as it just saves me cooking & chopping time & still tastes fab. For a big event I usually make a day or so before.

Saint Delia's recipe is the best of all time. I've tried others but they're not as good. Hers is perfection. It freezes and reheats perfectly so can be made in advance. Also great with sausages and mash and other roasts as well as with turkey.

I wouldn’t call this a recipe. Red cabbage chopped, red onion chopped, garlic, apple (if I have one), currents or sultanas, spices such as cinnamon, cloves, nutmeg, all spice, red wine vinegar about 200ml, sugar, three tablespoons (adjust vinegar sugar ratio later) Into slow cooker for eight hours.

I’ve never done it, they all sound very sweet to me (sweetness and veg don’t go IMO eg hate glazed carrots) - does the vinegar balance out the sweetness like in chutney?
