Braised red cabbage. How do you do it?

I've seen so many different recipes.

I like the idea of using apples and potentially cranberries instead of sugar.

Don't know how I feel about adding onion?

Every recipe has a different variation of ingredients, bit overwhelming. But I want to find the perfect, tried and tested fail proof recipe.

Would anyone like to give me their take on Braised red cabbage?

Delia red cabbage here too. I make it in the slow cooker and use a Schwartz mulled wine sachet in place of the spices (2 if it’s an extra big cabbage) for a more subtle flavour. I halve tbe amount of sugar but that’s my taste.
I freeze what I need for Christmas Day and then smaller portions to go with future roast dinners.

How long in the slow cooker please and on what temp setting?

Got my recipe from an elderly Viennese woman back in the late 1960s when nobody had heard of braised red cabbage. Onion, garlic, cooking apples, juniper berries, the sweet element from redcurrant jelly stirred in at the end.

DH makes his Omas recipe every year and it sounds similar to this but he adds a bit of marmite too, its supposed to be beef stock but he is veggie
He adds a bit of red wine too

I have a crock pot which has low and high settings but no idea what temp they are. I do it on low and test after 3 hours to see if done, if not put it on for another hour.

I’ve never done it, they all sound very sweet to me (sweetness and veg don’t go IMO eg hate glazed carrots) - does the vinegar balance out the sweetness like in chutney?

Delia's recipe has a very small amount of brown sugar with the spices but it doesn't taste sweet at all. I think it just balances out the acidity of the vinegar and mellows it. It's nothing like the sweetness of glazed carrots, also carrots are naturally sweet anyway but cabbage isn't.
You're missing out on a great dish!

Thank you @Buxusmortus so more like chutney then? I do like chutney. I suspect no one else here will eat it but I do like cabbage a lot so might give it a go. Although I’ll have to find a small cabbage as we aren’t ones for leftovers, back to normal food from Boxing Day here.

Well it's not like chutney because it's cabbage and doesn't have a chutney consistency, it also isn't as sharp as chutney, it has a much smaller amount of vinegar in it, basically a small amount of both sugar and vinegar. It's just a delicious flavour. It freezes and keeps really well and is also just a flvoursome veg you can have with ordinary food after Christmas. I live on my own and there is always some left after Christmas, I portion it and freeze and use when I fancy.

I do a modified version of my Oma’s Rotkohl, but leave out the onion (IBS), I used red cabbage, a grated apple, sugar, balsamic vinegar and cranberry jelly.
Had it the other night with pork Schnitzel (from Lidl, I cheated!) and potato salad and my partner said he never felt more German 🤣

Mine is:
chopped red cabbage
2-3 onions medium chopped, 3 cooking apples chopped
raisins/sultanas
balsamic vinegar
cloves
cinnamon stick
brown sugar
salt and pepper
optional red wine
water to cover (just)

Onion, cooked till.soft in butter (there's a lot of butter in this)
Cabbage, stir till coated in butter. Bit more butter
Apple maybe. Touch of cinnamon or nutmeg. Clear pan with port. Add brown sugar. Touch more butter. Black pepper. Cook as much as you like.

Mine is red onions, cook those down for quite a while, then shredded red cabbage, cook that down for a while, spices, depends on how Im feeling, garlic, ginger, then red wine, apple cider vinegar, pomegranate molasses, sugar, apples sultanas. No measurements, just taste as I go. Cook it down for a long time, very sticky, sweet, sour, spicey.
