Ultimate Christmas buffet food

I am going to be hosting approx 20 people over boxing day. I want to make hosting as easy as possible so far we plan on doing some pulled pork, possibly some gammon, Bailey's cheesecake/ or Oreo cheesecake.What do you really look forward to when having a Christmas buffet?

Vol au vents. I absolutely loved them when I was kid and so now I make them at Christmas in memory of my gran.
Potato salad
A chickpea, feta and pomegranate salad (because we used to get pomegranates from my grandfather at Christmas and I've always associated them)

I normally do maple and mustard glazed ham, sausage rolls, mushroom and onion tarts, beetroot and red onion tarts, vegan spring rolls, BBQ wings, cous cous, potato salad, large green salad and a Christmas pie depending on how many we have coming. There’s also different breads, dips and a vegan and meat pate. I do a large cheeseboard for dessert as well as offer a cheesecake or trifle.

Part of me wants old school beige crap: sausage rolls from the freezer, samosas, breaded prawns, chicken nuggets, Wotsits, Twiglets, Cheeselets (LOADS of Cheeselets).

Part of me also wants a turkey sandwich and maybe a prawn cocktail and or humus with fresh crudités. I would eat this with pleasure and not feel overly full and sluggish afterwards.

Onion bahji's, veg pakoras and thin matchsticks of veg like carrots and sweet potato etc. cooked in tempura batter.

Some sort of breaded cheese, like mozzarella sticks or breaded cammerbert with cranberry sauce. Last christmas Iceland did some delicious breaded cheese and chive stars from the cathedral city range.

Another one suggesting sasuage rolls. Marks and spencers do the best sasuage rolls, specifically the bacon and cheese rolls and the caramelised onion rolls. They are good hot or cold, but best when heated up.

Greek filo triangles filled with spinach and feta cheese are also a must have. I think the are called spanakopita?

After many years of hosting large family events I have realised that less is more on the buffet front.
I used to do loads of different things/mini bits and different salads etc .
I now just do a few things that work well together.
Usually-

sliced rare roast beef with rocket and horseradish mayo
OR
gammon glaze with honey and mustard

Puff pastry flan with pesto,courgette slices ,peas and feta.

Warm Butternut squash salad with vinaigrette

Tomato and onion salad

Chocolate brownies and berries

Mini Yorkshire pudding canopes with a bitnfinroast beef and horseradish (can just be sliced packet stuff) with a side of gravy to spoon in.

a ham and/ or salmon & selection of salads
rocket, orange and halloumi honey roast parsnip salad is lovely

cranberry and cashew but roast

cheeseboard, crackers and bread and nice pickles / chutneys

stick sausages or pigs in blankets

crudités

nuts, satsumas, quality street

Agree with previous posters that I’m split between fancy cheese board, salami, prosciutto, olives, sundried tomatoes, crusty bread etc

and the beige mini frozen sausage rolls, mini pizzas, cocktail sausages, cheese and pineapple, chicken breast nuggets etc

If you are having turkey on Christmas Day and will have some left over, follow a recipe for Coronation Chicken but use turkey instead.

Depends on your guests but I'd be ready for a fresh chopped salad to go with the mains and a fresh fruit salad to go with other desserts.

This Irish cream tiramisu is an alternative to your cheesecake and is possibly easier to make more of for a bigger group.
