I’ve decided I fancy a change this year - every year I make a cranberry stuffing and the other people at the table (AKA the heathens 😂) just eat the sage and onion.

so hit me with your best Christmas stuffing 🎄

Stuffing mix mixed with sausage meat (get a nice one from the butcher's) wrapped in bacon. Can do it balls but I do mine in a loaf tin and serve as slices. I think it's a Jamie Oliver recipe, I've been doing it for donkeys years.

This is very similar to our favourite stuffing, but we add extra onions and chopped baking apples to the stuffing mix and sausage meat.

I find it really hard to mix it all in thoroughly, takes ages and my arms ache! Then last year I put all the mix in my Kenwood Chef with the K beater, whizzed for a short time and wow, it was beautifully mixed in seconds with no effort!

I love this stuffing cold in a turkey sandwich on Boxing Day.

I make breadcrumbs from the end of a seedy loaf, add shallots and bacon fried in butter, lots of pepper and salt, an egg and the sausage meat from a pack of good sausages (usually Cumberland).

chorizo, caramelised red onion, chestnut and good quality sausage meat with other secret ingredients i couldn't possibly share. it's a meal in itself!

Chestnut stuffing made with sausage meat, breadcrumbs, onion and celery.

And an apple and walnut one that I sometimes add cranberries or apricots to as well.

But also paxo.

Gluten free here.

Arborio rice, parboiled
Pork mince, browned and caramelised
Apple, finely chopped
Walnuts or pecans, chopped.
Onion or leek, Lots and sweated until soft.
Thyme
Salt and pepper
An egg, whisked.

Mix everything to the salt and pepper. Taste for seasoning. Add enough of the egg to just bind.

Stuff turkey or chicken, including under the breast skin.

Add cider to the gravy. An apple based chutney can be added to the table.

I don’t like cranberry but apple works with turkey, chicken, ham and pork.

Marcus Wareing's raisin and pine nut stuffing. It was in the Waitrose magazine a few years ago and it delicious.
