I’ve decided I fancy a change this year - every year I make a cranberry stuffing and the other people at the table (AKA the heathens 😂) just eat the sage and onion.

so hit me with your best Christmas stuffing 🎄

Just Paxo sage and onion stuffing but made with sausage meat. Delicious. Can't beat it with any of the fancy stuffings.

As per @pbdr I just mix up paxo sage and onion and add sausage meat. If I can be arsed I baste the top with juices from the turkey which adds extra flavour. Otherwise you could add chestnuts, apricots, dried figs or an apple and parsnip combo should work well.

I use de-skinned caramelised red onion sausages made into balls. Everyone loves them.

I peel and finely chop an apple, finely chop a couple of shallots. Fry. Tip into large bowl. Big handful of fresh sage ragged about on the mezzaluna. Add to bowl. Big chunk of sausage meat goes in. Add enough Waitrose chunky fresh breadcrumbs until it feels like a sticky, but crunchy texture. Season. Pop in small baking tray lined with foil. Add to oven when pigs in blankets go in.

Yum.

don’t worry, Paxo (Aldi equivalent 😂) will be on the table but I do like a fancy Christmas stuffing!

Stuffing mix mixed with sausage meat (get a nice one from the butcher's) wrapped in bacon. Can do it balls but I do mine in a loaf tin and serve as slices. I think it's a Jamie Oliver recipe, I've been doing it for donkeys years.

Celery and lemon - old recipe from my mum, and a chestnut and walnut one, from an old Safeway magazine, was originally an alternative to the turkey - done as a loaf with parsnips lining the bottom, but was so good I do it as a stuffing now.

A parsley and thyme one with chopped hard boiled eggs, suet and breadcrumbs. My b 1860s gt grandmothers. All done very much by eye and how it feels/smells. It shouldn't work but it does!

Otherwise, an adapted version of the Nigella chestnut (I think it's on here as an official Mumsnet recommend)
