MIL is the HARDEST person ever to buy for. She doesn't really have any hobbies, doesn't like food presents (have given her a hamper of home made food and drink last year and no one has looked less impressed at anything...!) and has an incredibly minimalist house so doesn't like home gifts. She doesn't like going places she hasn't been so a restaurant/theatre voucher wouldn't be used.
Every Christmas or birthday she kills me! Anyway I have got her:

  • Fluffy slippers
  • Gel eye mask that can be kept in fridge or warmed
  • Small box of chocolates
  • Make up bag
Does this sound ok?

What about a subscription thing, you can get ones for all sorts these days, from monthly flowers to cakes etc

I'm 50 and I'd love them, but then I am a very easy person to buy for and love anything home related, perfumes, toiletries, posh candles and anything fluffy!

I'm 53 and would find those gifts dull but inoffensive.
Fluffy slippers - not my style
Gel eye mask that can be kept in fridge or warmed - wouldn't use
Small box of chocolates - yes please
Make up bag - would be co-opted to carry my portable charger and cables.

She does sound very tricky to buy for. Not sure how well these suggestions fit your budget, but what about:

Heated blanket/throw for use when watching TV?
Set of fancy coffee mugs?
Oodie?
Posh toiletries - luxury soap or hand cream?

that sounds really hard OP. what about a charity gift like a donation to a charity she supports. Or as others have suggested a voucher. She sounds like blimmin hard work.

No to all of it unless the make up bag was exactly to my taste - a Liberty print.
It would all go to the foodbank and charity shop.

I personally would like a JL voucher or an Amazon voucher to buy books/audiobooks.

I'm about her age (but don't recognise myself in your descriptions thank god! Eg, I have loads of hobbies).
I am very particular so slippers wouldn't be good for me as I like a certain sort.
Eye mask? I wouldn't know what to do with one but it might be OK.
Chocolates - yes please!
Make up bag - useless for me.

Do you know if she likes a certain scent that you could buy her in soap or bubble bath or shower gel or even drawer liners? I'm quite old fashioned but I prefer quality bars of soap over hand/body wash, and something like scented drawer liners are a little luxury most people don't buy for themselves.

Jeez, she sounds incredibly boring! I'm 52, still feel 32 inside & like to think I'm stylish with a modern outlook. My sister is 56 & never in! How different we can all be.

I'd not really like any of those gifts, not that I would say.

Cashmere socks been suggested? Wine subscription? Push her a bit & a voucher for a local pottery/ crafting experience?

Slippers aren't my thing, I don't eat chocolate and I have enough makeup bags to hold my makeup in.

I'd be more of your limited edition Godzilla model, hoodie with Mickey's Gym, Philadelphia decal, socks and another woolly hat with a torch on it for trail running and an external SSD for my laptop type of 50 year old than Nanna slippers and some Ferrero Roche. As many 50-60 year olds are, both male and female, because we aren't 80.

I would like the slippers and the small box of chocs. Don't use eye masks or make up bags or drink red wine. Though at least wine someone will drink. It will vary by person, I prefer either a voucher or things similar to what I have already as I know what I like. For me like some nice mini bath foams or hand creams but not Bayliss and Harding.

I will say OP, if the attitude towards MiL on MN is reflective of real life, the very best present your MiL has is a DiL who actually cares to please her at Christmas. You sound like a lovely DiL. I have a lovely one too, and she could buy me a 10 foot inflatable Elvis wearing flashing reindeer antlers that danced the macarana, and I'd love her for it.

I wouldn’t want any of that- just turned 60.

Stopped make up in mid 50’s
Never looked at or even thought about gel eye mask. Definitely wouldn’t wear it.
Fluffy slippers, only if by Celtic and Co
Chocolates or food no. Too much at Christmas as it is.

My mother hates getting gifts, she says if she wants something she'd prefer to buy it herself and get exactly what she needs rather than someone else's choice. Also she had a massive declutter last year and house is very minimalist now.
So we give her Amazon vouchers.

Can you not get her a voucher towards an experience? Like an afternoon tea somewhere. Or entry to a show etc.

Usually my go to if I have no idea what to get someone.

My MIL is the same age and DH and I paid for her to have afternoon tea on the bluebell railway. She could take whoever she liked and she loved it.

I’ve just turned 56 (no grandchildren) and I would love:
some nice reusable Christmas decor like a nativity scene, a non-kitch snow globe or an advent candlestick with 4 candles.
any liquid for my Lampe Berger or some good essential oils.
a taster set of coffee or teabags, pasta (Facebook told me Giovanni Rana has made one for delivery this year), herbs and spices…

Oh thank god for that, I’m about 2 years off 50 and I was panicking that something happened when you turned 50 and I’d suddenly age 30 years.
