Help me with nut roast!

I love stuffing so I think that in theory I should love nut roast too. I've tried a couple of ready made including M&S but can't find one I like. Too fruity I think. I'm happy to have a go at making my own if the shop bought aren't all that.

Any recommendations please?

DM used to make the most delicious one with chestnut stuffing & red wine gravy - I preferred it to a turkey dinner. I will ask DM if she still has the recipe

I love the thought of a nut roast but generally found them disappointing until I tried the BOSH ultimate nut roast. It’s really
good. I can only find their nut roast (not ultimate) online.

I have the perfect recipe from an old book. I'll find it later and post it. It's very easy and absolutely delicious.

For the yeast extract i use marmite, but it doesn't taste marmitey.

Sometimes I add mushrooms to make it a bit more moist and also a layer of cheese in the middle (fill loaf tin half way add cheese of choice - hard or even slices of brie) then another layer if the nut roast mix.

Without these it is quite close to a stuffing and if you add more sage or thyme that makes it more so.

Nut roast skeptics are often surprised by how much they like it, but its a really 70s trad version- I don't like the bought ones as they have been too messed about with.

@PaperBlinds That's the exact one I was going to post! I had no idea it was online. Everyone I've served it to loves it.
OP I'd just add, don't add salt as there is plenty in the marmite and stock; use a good mix of nuts and not too many peanuts; don't grind the nuts too fine, you need some texture; and make sure it's well cooked so it's firm.

I do variations on this from Mean Beans by Cas Clarke.

Any mix of nuts/seeds to the required weight, I often add some tomato purée, some herbs, plenty of garlic, whatever - it is ver forgiving. I also replace the stuffing mix layer with grilled halloumi.

I line a tin with puff pastry, fill with the mixture, put a pastry bottom on and turn out onto a baking sheet to bake, or, wrap in pastry to make a wellington style dish.

Really nice cold too.

I made one once to take to a friend’s so I could have it for Xmas dinner. (They asked me to, it wasn’t a pas-agg protest at meat thing!) I had one slice, left it there to pick up the next day, and the b*stards had finished it off!

@FictionalCharacter - it really is the best , i love it. I used to work in a Cranks style veggie cafe (a really looooooong time ago) and they made this on an industrial scale. It freezes and keeps well too.

I like the look of this! What do you cook it in? It says a shallow baking dish. How shallow??

@hels71 i just do it in a loaf tin as it's easier to slice but I have done it in any number of baking tins - brownie tin makes easy squares if you serve as a side and you get more crispy bits.

That’s probably the one that @PaperBlinds and I like. I have that book but probably an earlier version judging by the cover, and I bought it when it was first published many decades ago!

I'm guessing it will get harder to find copies of these as time ticks on. Mine says it was published in 1994 (which to me seems like about a decade ago rather than three! 🤣)
