If I have a meat substitute, it's Linda McCartneys' veggie sausage roll. Otherwise I just load up on the Yorkies and roast potatoes. Xmas Grin

Claudia84 · 26/11/2022 19:33

Just anything with pastry 🤤

MagentaTulip · 26/11/2022 21:21

My dd usually just has everything but the meat, we make Yorkshires too. She’s not been keen on nut roasts and will not eat fake meat. This year she tried the Higgidy Cauliflower & Broccoli cheese pie and loved it so we are getting one of those for her.

Howmanysleepsnow · 26/11/2022 22:35

DD just has all the veg, roast potatoes (in olive oil with garlic and rosemary), fake pigs in blankets and gravy

Loachworks · 26/11/2022 22:37

Mushroom (various types) and baby corn stroganoff with saffron rice.

This is absolutely delicious! www.deliaonline.com/recipes/type-of-dish/vegetarian-recipes/cheese-and-parsnip-roulade-with-sage-and-onion-stuffing?amp

I've made it for meat eaters before and not bothered with turkey (though I did pop some pigs in blankets on the side!). It freezes beautifully too if you have leftovers, it makes quite a generous portion.

I have this every year - it’s amazing!

Trumpton · 27/11/2022 03:16

@Howmanysleepsnow

Which veggie pigs in blankets do you do?
I wrapped my own last year and they were ok but not brilliant.

@biscuitcat

I have copied that roulade recipe into my file. It looks delicious.
We are down to 8 for Christmas dinner this year and 4 are vegetarians.
I need to up my game!

caringcarer · 27/11/2022 04:04

DH is vegetarian and every year cooks himself a lentil loaf. There is enough for boxing day too. I cook turkey, beef, Yorkshire puds, roast potatoes, mash potatoes and 4 vegetable as well as sausage meat and stuffing balls and gravy.

I cook Delia’s Parsnip Roulade every year as the family like it so much. We normally have the M&S nit roast too.

My advice though is please don’t leave the roulade until Christmas Day. I make it the day before as it’s one of those Delia recipes that’s brilliantly reliable but has lots of steps - seperate the eggs and whisk the egg whites, makebreadcrumbs, bake the Swiss roll bit, cook parsnips, purée them.

The recipe call for Sahe Derby cheese but you can use tasty cheese like cheddar and add some sage to the breadcrumbs stuffing.

I now make two as DD is gluten free and she always hopes for leftovers to take home.

HannahDefoesTrenchcoat · 27/11/2022 06:44

Sage Derby Cheese

HannahDefoesTrenchcoat · 27/11/2022 06:51

Some photos as it gets sent out to herald the start of the festivities 😂

The picture with two shows the gluten free one next to ordinary. DD and DH prefer not to eat gluten and are gluten sensitive rather than celiac so I’m not worried about keeping them completely seperate.

Im going to cook a homemade nut roast today using one of the recipes in this lovely thread as a trial.

They are being bigger than they look in photos - length of baking tray

lightlypoached · 27/11/2022 07:03

I made this recently and it was divine (and made a change from nut roast).

Bonus is that you can make it ahead of time and double bonus, non veggies can use it as stuffing.

It looks beautiful and special too

All the shop bought vegetarian options around Christmas are so sweet- cranberry in everything, caramelised this that and the other, a touch of orange. Some veggies must like it but I don’t. As a PP said, I’m usually happy with a big plate of veggies if done nicely and a nice variety, with potatoes and Yorkshire puddings etc. Other than that, something in pastry like leeks and spinach with cheese.

BooksAndHooks · 27/11/2022 07:08

We like the Quorn Roasts and usually get a vegan gammon roast ordered online or from Holland and Barrat. Yes it’s processed etc but it keeps it’s as similar to a traditional Christmas dinner as you can get. We used to do nut loaves etc but it’s not the same.

Doingmybest12 · 27/11/2022 07:08

The other day I was cooking roast and had a bit of paxo stuffing to use up. I bunged in some nuts and chopped cooking apple and it was really tasty so I am going to do a variation on christmas day as the veggie option. Might add a bit of cheese and mushrooms too.

HannahDefoesTrenchcoat · 27/11/2022 07:11

lightlypoached that’s beautiful. I might try that and this Anna Jones chestnut and squash creation that pp linked to

Dd1 and I will have a leek and smoked cheese pithivier (i think it's a river cottage recipe). It's easy to make before hand, and is really nice cold the next day with leftovers.

RemusLupinsBiggestGroupie · 27/11/2022 09:29

@caringcarer Which recipe does he use for the lentil loaf, please?

RowRowRowYourBoat1 · 27/11/2022 11:33

I’ve mentioned this vegan haggis recipe on other threads. It’s so delicious and easy (especially if you use a food processor but I usually make it by hand). It’s my go to for all roast dinners and after the first day or so the leftovers are delicious as a filling for veggie sausage rolls with a spread of chutney and maybe some grated cheese. Last year I made it into a big sausage roll effectively with puff pastry and the chutney and cheese. Served on its own it’s nearly like another stuffing which all the meat eaters love too. A photo of the roast and it served with all the trimmings.

Huge plate of lovely veg!
Not keen on nut type things nor the meat substitutes so I am really really happy ( mouth watering as I type) with a pile of roasted and steamed veg, spoonful of sage & onion stuffing and vege gravy.

This is me!
As long as I've cauliflower cheese I'll be happy
