There was a thread on this last year but I can't find it. I want to make a really lovely trifle and would appreciate any ideas
Thanks !

Use boudoir biscuits or trifle sponges, not regular sponge or jam roly poly. I find sponge goes soggy too quickly. Brownies work well though if you’re doing a chocolate version. Arrange them in the bottom of your bowl.
Alcohol is a matter of personal taste. I find 120ml about right and use sherry, Madeira, Marsala or Bailey’s (or Kirsch for the Black Forest version). Sprinkle it over the bad layer and leave for about 30mins before adding the fruit,
Use defrosted frozen fruit rather than tinned fruit, as tinned is too mushy. Mary Berry uses tinned pears, which do remain firm, but they have a slight graininess. I often add a spoon or two of jam (or marmalade) to make the fruit more fruity!
Use fresh ready-made custard. I usually use a whole 500ml tub.
For the topping, I like a mixture of double cream whipped with creme fraiche and a spoon of icing sugar. I normally use 300ml of cream and 200g creme fraiche. Mascarpone or Greek yogurt works nearly as well if you don’t have creme fraiche. My DM also adds a bit of booze to the cream, but I’m fine without!
Scatter something on the top to complement the fruit, such as toasted almonds, coconut, amaretti biscuits or crushed maltesers.

Ooh yes, trifle recipe here too! I’m hosting this year, and my Mum always makes a trifle for Christmas Day and I want to carry on the tradition!

I’m going to make one of these this year 😀

Black Forest Trifle

You could try Hunters pudding for variety? Its sponge ( you make your own, the recipe I had was just gorgeous) soaked in brandy, or maybe it was sherry, and red wine, with cream and caramelised almonds on top. Delicious!

I've made https://www.bbcgoodfood.com/recipes/classic-trifle quite a few times and it's amazing; I use cassis not sherry. Worth noting that the custard takes ages to set, so I usually make it up to the custard part in the morning and the rest late afternoon/early evening to avoid the jelly sinking into the custard; it's a Christmas Eve job.

Mipe That Black Forest recipe is magnificent. I made it once for the requested 2 trifles Christmas Day when everyone was too full to eat any dessert (apart from me, that is).

ProfessorRapson I might make one this week just to make sure it’s ok for Christmas 😁

Following for inspiration.

In previous years I’ve made the fruit layer from orange jelly with clementines in (tinned I think so I didn’t have to peel all the segments).

Tried this many years ago and never saw the need to try another one, though I may vary the fruit.
