Veggie main dish for Christmas Day

DD is newly vegetarian.

I need to make something that is easy to deal with on the day (happy to spend time in advance). She doesn’t like melted cheese much (goats cheese is maybe ok) and doesn’t love a nut roast.

Last year was my first as a vegetarian and I had a stuffed acorn squash. This year I am thinking of doing a pie of some kind.

There is a Jamie Oliver butternut squash stuffed with rice and I think pistachios and cranberries. It was a bit of a pfaff, but could easily be prepared the day before and heated up on the day.

I loved the M&S mushroom and ale pie, they don’t seem to do it anymore though. I’m not a fan of cheesy stuff either.

Anna Jones has loads of great recipes - easy but delicious things that feel like a ‘proper’ meal (and not a nut roast in sight).

I know you're planning on making it yourself but M&S did a fabulous frozen mushroom gallete last year, it became available a few weeks before Christmas & was about £8. Absolutely delicious & a bit special.

My mom makes a nut roast in advance and puts a couple of slices wrapped in foil in the oven for a few minutes near dishing up time.

Mushroom Bourguignon would work well, could be prepared a day or two in advance and heated up on the day. You could add chestnuts (vacuum packed) and stuffing balls for extra Christmas flavour.

It would also go well with all the standard Christmas dinner items such as Yorkshire pudding and roast potatoes, which can't always be said for vegetarian Christmas alternatives.

Family of veggies here, the M&S Christmas range always has some excellent options. No idea what they are this year but we'll definitely be eating one of them

For a couple of zero faff options (because you don't need to give yourself more to do) my DD loves either the vegetarian haggis which goes down a treat on the side for the meat eaters also, or the Quorn roast.
I prefer the haggis option personally

Another vote for quorn roast.
I don't mind nut roast type dishes but it's too similar to stuffing and I don't want 2 portions of stuffing.
Linda McCartney sausages too, which I'm not keen on normally but I like (with bread sauce and cranberry sauce) instead of pigs in blankets.
I like making sandwiches with the left over quorn too.

Do you have a burger press? You can get them on Amazon for about a tenner and they turn anything you want into a burger. It makes cooking for my vegetarian DD much easier. I do a chickpea thingy with some herbs and spices (mash up some chickpeas with roasted garlic and cumin and a teaspoon of tomato purée, or put some Pataks paste in for a chickpea curry burger) either fry it or put it in tin foil and bung it in the oven or barbecue. Not Christmas related, but it also works well with leftover veggies and potatoes from Sunday dinner for veggie burgers on Mondays.

DD did something last year which was pastry on a baking sheet, filled with Christmassy veg like chestnuts, cranberries, squash, etc and herbs. Was amazing! Or you could do a chestnut Wellington.

My husband likes giant mushrooms stuffed with sage and onion stuffing topped with goats cheese and toasted. Served with a bistro and red wine gravy.
