Best way to cook a small joint of beef?

Have an oven and slow cooker.
It’s quite a small piece, just want it to be not dry!
Never cooked it before but overwhelmed with the many different recipes online!

Depends how you like it!
Roasting a small joint is tricky if you don't want to risk it being dry. If you like rare beef I would brown it in a pan then roast for the timings for rare, depending on weight.
But I think I'd prefer it braised - in the slow cooker with seasoning, stock veg and wine or beer, then keep on for a couple of hours. Tasty, juicy, easy.

I always cook my beed in the slow cooker. It comes out perfect. I dont do anything fancy to prep it, I don't add anything. Just pop it in the slowcooker for a few hours till it's done, then slice it up wrap it in foil and put it back in on warm till it is needed.

The slow cooker also makes enough juices to make a loveky gravy as well.

Th is OP. Does anyone else have any ideas for beef by any chance pls? I’ve bought it for the first time this year and don’t have a clue. Like the idea of slow cooking it though Smile

I always braise my roast beef I dry it out other wise I do it slow in the oven with carrots onions and stock .

Slow cooker here too! Garlic, onion, carrot, celery, bay leaf, rosemary sprig, pinch mustard powder. A mini bottle of red wine and put it on low. While it's testing I sieve the juices, add a corn flour slurry and thicken into gravy. Family love it!

Slow cooker fan here! I pop it in on a Saturday night before bed with a wee splash of red wine and it's perfectly cooked for Sunday afternoon. You can make the best gravy from all the juice at the bottom, oh I want a big roast beef dinner now!

Personally if it's small I brown it in a frying pan then serve it Grin but I'm fond of basically raw meat.

Larger joints of for fussy people i out it once browned in the oven at 190/gas 5 for 20 mins per pound/450g

Oven! But slowly cooked.
Just seal it with some lard in a frying pan. Make sure it’s dark brown all round! Place it on a rack with drip tray in the oven at 80 / 90°C leave for around 6 hours. Perfect. This can always be done the day before!

I pop it in a roasting tray.. Splash of olive oil and season well..

If it's small it'll cook in about an hour.. so after about 25 minutes .. I will pop some tin foil on the top and then take off five to ten minutes before taking out.

I'm talking a small piece of beef, but honestly it's beautiful..

Thanks all, I won’t add wine as we are Muslim but noting down other suggestions.
It’s a joint of shin I think, I have to confess that I don’t know all the different pieces so just went with what they had in the butchers Confused
It’s a 500g piece so small.

Shin of beef definitely needs long, slow cooking. It's a wstewing or casserole joint really.

I use the red wine stock pots, they are non alcoholic but give a nice cooked wine flavour.
I rarely cook actual roast beef these days though, I usually do brisket as it works out cheaper in the long run and I think is the best for slow cooking.
I even use it for spag bol now.

Ooh yes shin then slow cook. Alcohol not essential at all, stock pot or cube totally fine!

I can rarely find shin, unless I go to the butchers and I can't really afford it hence brisket.
Morrisons are good for great meat without being too expensive.
I particularly love the beef heart when they have it, lamb breast, oxtail, marrowbone and also the turkey thighs.

Ooo thank you for the wine stock pot recommendation!
I do love Beef but don’t very often buy it because of the cost and there’s not always availability of halal meat where I live.
Hence me not wanting to ruin this joint by cooking it wrong Grin

Yes to slow cooker!

I put the beef in (don’t bother browning it) and cover with hot BEEF OXO stock.
Cook on high for 4-6 hrs.

Take the meat out, pour liquid into a saucepan and add cornflour/cold water mixture to thicken the gravy.
Bring to a boil stirring all the time.

It is gorgeous. Tender with amazing gravy.
