Veg main for Xmas day?

I'd like to make a veg main for two teens on Xmas day. Any quick, easy yet fabulous suggestions? No nut roast.
There will be potatoes and all the trimmings!!

Everything is always pastry or loaf as a veggie tbh. Certainly nothing quick & easy.
I’m contemplating buying something from the supermarket but I often just have the potatoes & veg & maybe have cauli cheese as my dish -no one else in my family eats it so it’s an extra on my plate.

Sorry, no help I know but bumping in case anyone else has suggestions.

Mushroom Wellington is a winner if they don't love nutty things. We have nut roast but have had Wellington in the past.

Had cauliflower cheese as the centrepiece one year. A couple of plant- based sausages will add to their plate if it seems too sparse.

I'm making a mushroom bolognaise stuffed tomato and zucchini to go along with the veg sides for my veg and vegan guests.

I've not made it before nor have I got a recipe to follow apart from the bolognaise, so fingers crossed it works out!!

We did a mushroom wellington for my vegan sister and a nephew

Was also thinking of doing a stuffed butternut squash (slice in half, scoop out seeds and stuff with whatever you fancy!)

I am probably the only vegie who loves a very well made pasta dish as a main for Xmas dinner, but there you go: pasta with homemade Alfredo Sauce or Walnuts sauce. Lovely.

I made Jamie Oliver's veggie wreath last year, from memory it has puff pastry with cranberries, nuts, squash, possibly breadcrumbs but you can stick anything in it really. It went down well!

Do they like mushrooms? I do big mushroom stuffed with mashed Stilton and walnuts.

Or: fry some onions, mushrooms and red pepper. Mix into Paxo stuffing made up in the usual way. Add chestnuts/nuts. Put into an oven dish and top with a bit of cheese. Cook until golden.

We do a mushroom wellington (well, mushroom, onion, spinach, and stilton wellington) – cook off the onions and mushrooms, add the spinach (frozen is fine) and cook the water off , let cool, add stilton, salt, pepper, and wrap in pastry. It goes well with the traditional sides and looks nice on the table without being too much faff.

As a vegetarian, I do think it's important to have something with protein as the main as otherwise they just get a plate of vegetables really which is both boring, lacking in varied texture and unsatisfying. So something which contains either nuts, egg, lentils, cheese or all of them hits the spot . I hate being served pasta or quiche as they don't go with the normal Christmas accompaniments.

These are pretty easy and could be made beforehand. They look nice once turned out. I added cheese for some extra flavour and an egg to hold them together/extra protein.

I’m in a loop of cooking this Delia roulade every year. It’s very popular even with fussy teen and her fussy grandmother. It has quite a few steps but does come tighter impressively but I would never attempt to make it Christmas Day. You could just leave the nuts off as they are just on the outer layer. I just use mature cheddar and a bit of sage rather than the sage derby cheese in recipe.

M&S do a spiced lentil and vegetable haggis. It goes down really well. Meat eaters can have a little on their plate too
