DH wants a trifle for Christmas dessert. Recommendations please....

Are you trifle purists?

Because if not, Nigella has a Chocolate Cherry Trifle which is like a magnificent bowl of Black Forest that you want to dive into.

Our favourite ...

Black Forrest/Chocolate Fruit Trifle

A layer of Chocolate chip cookies in the base of a large trifle

Handfuls of frozen fruits of the Forrest scattered on top

2 lots of black cherry jelly(or black currant jelly if you can't get it)
Dissolve jelly as per instructions, but add only half of the cold water & replace a bit of this with a couple of tablespoons of kirsch or brandy
Pour jelly over the frozen fruit & cookies & pop into the fridge to set.

Warm 2 packs/cans of custard, melt into them 100g of dark & 109g of milk chocolate, add a dash of your alcohol.
Pour chocolate custard over the set jelly & pop back into the fridge to set.

Whip a large tub of whipping cream with a few tablespoons of baileys. Cover the chilled trifle with the baileys whipped cream

Crush 4 cold flake chocolate bars & top your trifle with chocolate flakes

Yiu can leave out the alcohol for kids... we used to do small alcohol free ones when our DCs were small & a big grown up one

I would totally love the Baileys one, and in fact, have some spare Baileys.

However, I think I need to go traditional to cater to elderly relatives. I am talking sponge fingers (or similar), custard and cream.

My nan’s recipe.

Stale Victoria sandwich cake in bottom of bowl with a good glug of sherry to soak into sponge, any flavour jelly on top, leave to set in fridge. Thick homemade custard, pour over the top, leave to set in fridge. Double cream whipped till thick, spread on top of set custard and sprinkle with hundreds and thousands.

If ita nostalgia you're after, can't go wrong with a Bird's trifle. The one in the cardboard box! Dc and I made it recently and it was fab. Added defrosted frozen raspberries and used a flake instead if the chocolate strands in the kit.

I don’t follow a recipe as such - I just spent 30 years watching my dad make it.

Line bowl with Swiss roll and soak with Sherry
Make jelly and allow to cool
Pour jelly over to approx 4cm deep and allow to set
Pour custard over (I use ready made) about same depth as jelly
Whip cream and spread over top

MIL announced yesterday that she is making trifle and I know she just won’t do it right 😭 trifle is a big deal in my family!

Leave alcohol out I hate in trifle especially now I don’t drink. Never liked it even when I did but these recipes look wonderful.

I make mine with ginger cake and rum. It goes as follows : slices of ginger cake, much rum, layer of custard, repeat til reach top of gigantic trifle dish. Top with cream, peeled orange segments and grated chocolate. Always a winner with the older members of my family.

Trifles afford glorious opportunities for showmanship, and no culinary skills needed, just creative oomph. This is what I will be doing to assemble mine:
base = large meringue nest from Tesco, then:
sliced Swiss roll arranged around the edge (glass bowl essential), sherry optional, then:
jelly from M&S (with fruit in), then:
Madagascan vanilla custard from Tesco or M&S then:
Gingerbread extra thick cream from Tesco, then:
to decorate the top, lots of strawberries, raspberries and blueberries, with mini meringues (Aldi), salted caramel marshmallows (Tesco), Xmas sprinkles and edible gold spray.
Try googling 'trifle' and bring up 'images' - lots of inspiration there!

I did a different type last year.

Jamaican ginger cake
Lemon jelly
Limoncello in the custard
Gingerbread syrup in the cream
Ginger matchmakers on top

It was gone very quickly.

Madeira cake, sliced in a bowl. On top, please defrosted frozen forest fruit.

Get a tub of marscapone and a tub of ready made custard. Combine and put on top.

Whip double cream. Put on top.

Crumble a flake on top if you can be arsed.

Eat directly from the bowl.

My MIL makes a bloody mean one. As does my mother. I tried to make a fancy one once. It was crap. Stick to traditional is my advice.

I make raspberry vodka every year and use a bit of that to drizzle over the sponge fingers. Then a tub of proper vanilla-y custard (I use the Madagascan one from Waitrose. I don't like it set, so do a layer of raspberries then cream on top.
