Best gammon recipe

Hi all, I've got 2 gammons to cook for 2 different family occasions over Christmas can you please hit me with your most delicious recipes please! Think I'd prefer it so the gammon could be sliced as opposed to falling apart in a slow cooker type but open to being convinced either way.

This is my favourite and really easy. The glaze is so moreish, once you start eating it's hard to stop.

I usually soak mine for a day then simmer in apple and cranberry juice

I soak mine in water overnight to remove excess salt then cook it in Coke (original not diet). We have discovered over the years that, while glazing it looks impressive, it really doesn't make much difference so I no longer bother and we just slice it straight from the pan

I usually boil mine , then give them a blast in a very hot oven with some sort of glaze

I pick a theme and go with it, so apple-ey, mustardy ....boil with apple cores/juice glaze with mustard/brown sugar

honey/mustard....usually a plain stock and then a heavy glaze, lots of honey, whole grain, blacke treacle

ginger/ star anise...use ginger beer/ginger ale, get some ginger preserve and muscovado to glaze.

go fruity....orange juice, cloves, glaze with marmalade and honey

Another vote for Nigella's gammon in coke. It's amazing done in a slow cooker

I boil mine in a mix of 500ml dry cider, and then topped up with cloudy apple juice (usually a few litres more), with a few onions and bay leaves. That takes a good few hours.

Then I take it out, remove the netting and slice off the skin, leaving a thin layer of fat, criss-crossed into diamonds. Clove in each diamond, drizzle with honey, mustard powder dusted all over then some brown sugar, and baked until all golden and crispy, about 15/20 mins.

It’s honestly the best thing I make. Ever. Lovely sliced hot from the oven, and also lovely cold for days after.

They all sound yummy. I've done gammon in a slow cooker before and it's gone all stringy and not sliceable.... if I boil then bake will that be sliceable?? Lovely and moist in the slow cooker but I want to be able to have it in sandwiches etc or cook it in advance and slice it warm as part of the tea.

I have a fancy new AEG steam oven which was my treat for our new kitchen so I'm desperate to try it out but not a clue how to use it to it's best atm.

What temp do you finish it off in the oven?? Hot??

I sit mine in a roasting tin on top of roughly chopped carrot, onion and celery and about 1/2 inch of water. Cover with foil (so foil not touching the ham though, like a foil tent) cook until 1/2 hour before it ready.
Remove from pain and keep the water veg mix in a pot. Line roasting tin with foil, score the fat on top after removing any rind. Glaze with honey, mustard powder and orange juice mixture. Return to oven for last 30 minutes, slightly hotter. Re-glaze every 10 minutes or so.
It’s the best tasting ham I’ve ever had, I’ve tried quite a few recipes.

Also if the ham was unsmoked you can whizz the water/veg mix up in a food processor and you’ve got a gorgeous soup.
I’ve found with smoked though it tends to be a bit salty for the soup.

So the general consensus seems to be boil or steam for a few hours in some form of nice tasting liquid.... covering the gammon(?).... maybe with some veg to add extra flavour/use for soup? Score the skin cover with marmalade/sugar/mustard and and bake in hot oven for 20 mins to crisp up but line the baking tray first?

@wasthataburp does it make it sliceable of does it come apart in chunks if that makes sense?! Whenever I've done a slow cooker one it's been lovely and moist but not sliceable more like a pulled meat....

It is sliceable but probably not the most neat iyswim

@Bookworm20, you won't regret it! Top tip is to line the oven tray with three layers of foil, as the glaze stuff can catch during baking.

@Tigger83, normally around 200c for the oven bake, so relatively hot. Boiling then baking means the ham is tender but sliceable.

You can also just bake it from raw, but I find it makes the ham a bit more dry. Good for slicing thinly, though.
