Lovely Veggie Main

Hello!

I am hoping for some help with veggie main ideas for Christmas and Boxing day.

DH is veg and usually I make him a mushroom wellington which is fine, but I'd like to branch out a bit. On Boxing day he has cauli cheese, peas and red cabbage which is basically the sides to our roast gammon. Last year I got him the M&S vegan nut roast for Christmas eve which was really unexpectedly good.

But I'd like to branch out. He detests goat cheese and butternut squash but otherwise is happy and appreciative of everything.

The BBC Good Food website has lots of vegetarian Christmas mains. Some of them look really scrummy

A homemade nut roast can be really good - I will usually use stuffing mix as the base then add caramelised onions, mushrooms, and then a complimentary mix of roughly chopped nuts, dried fruit (e.g cranberries or apricot) & herbs

I weirdly rate the Linda McCartney’chicken’ or ‘beef’ roasts as they let you join in with the cold cuts leftovers thing!

There used to be a pub near me that did half and half pies in a deep dish, so pie filling with pastry hat on one side, cauliflower cheese on the other and baked together. I think I will recreate this for myself this year! Might try a chestnut & mushroom filling or maybe pea, leek, asparagus.

Gordon Ramsey's nut roast wellington is beautiful; we had it last year, was delicious.

Oh these all sound good! Love the idea of homemade nut roast using stuffing as a base. One year I made a terrific turkey meatloaf using stuffing mix and turkey mince and dried apricots. (Not veg though!)

I am thinking now of trying each suggestion every sunday as a practice and taste testing......... (plus have now a craving for a decent Indian meal... mmmmmmmm )

We are veggie and our traditional dish is apple, cranberry, white Stilton and port filo pie. It’s not too heavy so can enjoy all the usual roast potatoes, parsnips etc. Personally I find nuts roasts can be very heavy and calorific

It depends on your DH but I would be happy with a plate of what you consider the sides, just don't miss the meat at all and love the veg.

@TrueRefuge is it his vegan or veggie one that comes up if you search that you recommend? I'd try my hand at both but from experience making a nut loaf can be bankrupting Grin

Easiest option is vegetarian haggis. Few minutes in a microwave, possibly served in a Yorkshire pudding, and would probably be excellent in a pie. My Xmas dinner every year.

My Mum makes a beautiful nut roast with chestnut stuffing & red wine sauce. I preferred it to turkey! Will ask her for the recipe then post it for you.

Roughly what proportions do you use of stuffing mix to nuts to onion and mushroom?

@Lunde I honestly just wing it! For 1 packet of stuffing mix I would probably use a medium onion and 150g ish of white or chestnut mushrooms, sliced and pre cooked
I usually make up the stuffing mix with hot water in a bowl, add the cooked veg, then the nuts etc until the texture/taste seems right.
Lidl mixed nuts are v good value and I will often fish out eg all the hazelnuts one time and the walnuts the next!

I like the Artisan dry nut roast mix, the cashew nut one is lovely.

We love having individual toad in the holes, I make them in the loaf baking tray & use meat free Richmond sausages.

A tip for those making a nut roast:

I make a fairly large one and slice it into portions. Wrap each in greaseproof paper and put them in a ziplock or Tupperware in the freezer.

Then when the rest of the family have a roast dinner during the year I take a slice and dry-fry it on the hob as my alternative to chicken or beef. It keeps very well and makes an expensive nut roast much more economical. I usually get 10 portions from it.

I’m in a permanent Delia’s parsnip roulade loop. Everyone likes it. Even my fussy mum. It shouldn’t be as nice as it is. I often use cheddar with a pinch of sage rather than the sage cheese in the recipe.
