Oh,def Simon abd Garfunkles Silent night. And inn the Bleak mid winter as my gran died just before xmas and the night before she died the carole singers came to the hospital and me and my grandad sang it to her

Definitely Fairytale of New York for me.

My ds has been going around the house singing a carol he's been taught at school - I've never heard it before, and this seems as good a place as any to post it:

I love In The Bleak Midwinter - guaranteed to make me all lump-in-throat-y.

Cheese-wise, well I have to admit to a terrible, shameful soft spot for almost all Christmas music except, bizarrely enough, Fairytale Of New York which I think is, ummm, a wee bit overrated
