Right, who needs left over Turkey tips for those enormous, redundant birds?

Bad taste? Oh well.
I've got a 3-4kg solid boned and rolled turkey joint to use up between the 5 of us. I'm going to need them recipes, so let's be having them!
I'll share my own previously well used tip:

Sliced, cooked turkey freezes really well. I ready slice and freeze in small batches in freezer bags, suck all the air out with a straw (or just flatten and squeeze a bit while sealing the bag) then defrost as needed. It keeps really well, it's fine to eat on sandwiches or if you need a bit for soups or stews.

Right, what do you do with yours?

We made Paul Hollywood's leftover Christmas turkey pie one year. Was delicious. Obviously with store bought pastry, not faffing making my own!

Turkey, chestnut, pancetta and sprout fricassee. Sounds grim is actually delicious. Add a few flakes or dried chilli and some creme fraiche at the end with lemon juice and ,lots of black pepper and serve with crusty bread,

Also turkey, red onion, button mushroom stroganoff of type thing. Add plenty of fresh parsleyy and black pepper . Marsala is nice instead of brandy and obviously use cream or creme fraiche.
Excellent with leftover roasties or fried potatoes,

Cold turkey, braised red cabbage mixed with cr a berry sauce spread of warm toasted ciabatta or baguette or even brioche. If it the first two drizzle, with olive oil and salt and pepper before flashing in a hot oven to crisp.
Mushed up avocado and bacon is nice spread on the bottom of the bread too. Cherry tomatoes also good on it

My mum used to make amazing home made turkey pasties with all the little scrappy bits, they were incredible.

And bubble and squeak made with Brussels sprouts are fab.

Sadly I'm one of the millions who wasnt hosting Christmas so I've not got a turkey yet. But I've just sent OH out to try and buy one before everyone else gets there first!

I usually make up a huge batch of turkey & ham pie filling and freeze it in ziplock bags. Just need to defrost and add pastry at a later date.

Turkey & gammon lasagne 😋😋 Make a good sauce with passata, tomatoes, wine, garlic etc and drop in chunks of turkey and gammon to warm through. Then assemble with bechamel etc and cook like a normal lasagne. Bloody delicious. Make sure you've got some nice bread for mopping the plate

@SillyOldMummy try a local butcher. They will probably have cancellations. Failing that I would bet your local pub can help you via their suppliers. Wholesalers have been hit hard, supermarkets have been overwhelmed, so you stand a great chance of an excellent quality option at a great price whilst doing a good deed!

we haven't got a turkey yet either.

Our local farm foods had loads of frozen ones yesterday.
I'm heading to Lidl on Monday morning. If no luck then I'll try further, theirs are good and free range or organic or something, last year's tasted good anyway!

We need a ham joint too so will have to find that.

Boxing day is sandwiches with stuffing and cold meat with chips and pickles.
Day after is turkey and ham pie with bubble and squeak using up any leftover veg.
At this point the meat is removed and portioned for the freezer, the carcass is picked and stock made.
Then in no particular order:
Turkey and bacon or ham and mushrooms in sauce with jacket potatoes or in a plate pie.
Turkey curry
Turkey and bean quesadillas or tacos
'Turkey a leekie' soup to use up the last of the stringy bits off the carcass and the stock.

I was all set to buy a smaller joint this year but the family rebelled: apparently eating turkey for a week is part of our family tradition!

last Christmas we went away between Christmas and New Year and our dog went to stay with a friend.
he came back with only half of his dog food used, as he had been eating left over turkey meals.

he looked exceedingly pleased with himself!

garbage soup is the best bot of left over meals.

Make stock from the turkey carcass. (we tend to carve and strip the bird on boxing day)
Then onion and some herbs to start. Throw in all the left over veg, potatoes, stuffing, and all the little odds and ends of turkey, plus the stock.

Cook for a bit, then blitz in food processor until thick and chunky.

Delicious. We usually make loads and freeze some too.

We've got a turkey to feed 12 and there will only be 5 of us, so following!
We usually do a curry on 26 or 27th
Sandwiches with cranberry sauce and lettuce forever

Raised pie (like pork pie) with Turkey, stuffing, cranberry sauce, any other meats-ham, sausage.

Turkey and ham in white sauce/Campbell's soup with a puff pastry lid.

Croquettes- shredded Turkey mixed with mash, shaped into croquettes, breaded and baked.

Honestly we never get as far as curry with the leftovers. It's the best bit of the season, using the leftovers.
