have never cooked a turkey in my life ... its not just a big chicken is it

how big do I need? (lot of meat-eating blokey appetites)

Dad does stilton stuffed mushrooms for Christmas day for one sister, and a veggie onion tart for the otehr (one wont eat onions, other mushrooms.....)

to be fair one of the veggies has numerous food issues involving spices and lumps ... so I think I'd prefer not to go there at all

Seriously, buy the veggie option. I looked into cooking it myself and decided that I'd make a compete pig's ear of it (metaphorically speaking) so bought something from Tescos Finest range. All accompanying veggies, gravy and potatoes (and Christmas pud) were vegetarian (bar the fact they were cooked in the oven with the chicken)

OK. Very particular about roast spuds so normally I parboil for 7 mins. Drain and then return to pan and shake, add a table spoon of flour, Shake some more, transfer to prewarmed fat for 45 mins at 220 degrees.

When I freeze them I do the above until time to transfer to fat pan, then allow to cool and put into ziplock bag (they do go a little grey but you don't know once they're roasted.)

Heat the fat when its time to cook then add the frozen potatoes, cover them in the hot fat and cook for about 50 mins. They are still all fluffy due to the shaking.

You might want to trial it one time before the day itself just so you're sure they're ok. I know a potato failure would spoil my Christmas!!

indignatio .. its a mixture of physiological and psychological problems in an adult .. don't ask .. but there were operations and long-term medication .. and there's now a hang-over fear (IMO)

Cook the potatoes in butter, they taste gorgeous and I said eralier about leaving the turkey for an hour in foil to stand. I cook roasts every week and at christas always do the veg the day before.
