need recipe help

have never cooked a turkey in my life ... its not just a big chicken is it

how big do I need? (lot of meat-eating blokey appetites)

Just do your turkey a la Delia and it'll be fine.

was reading Nigella's feast at mate's house

has anyone ever done the brine soaked turkey (looked weird .. so am expressing interest rather than design) .. is it worth me buying the book 'cos I liked her plain turkey recipe idea I think

oh and need a stuffing that has no pancetta / bacon / pork meat in it if possible

nigella in her feast book said she can leave the turkey when cooked for a good hour in its foil package and it'll still be warm and juicy ... that would be handy for the whole roastie experience I feel .. hence desire to purchase book

I'm not allowed to cook the potatoes in the fat though .. has to be in veg oil .. which pisses me orf immensely is fine

I go to our fabulous butcher - they do just the turkey breast and will do stuffing with it too. I just tell them how many people I've got and they sort it - it comes with exact cooking instructions for the meat I've bought.

I love our butchers!!

our butcher used to do a roll of turkey stuffed with pheasant and duck and it was feckin' delicious ... now I could just buy a couple of them rather than a turkey lurkey .. but its not traditional and I am married to el traditionalisto
