What are the vegetarians having this year?

I have 2 teens who have turned vegetarian this year. Any ideas/ recommendations for good (and relatively easy) mains please?

My 15 year old son has been veggie for 2 years. He loves the quorn roast. I usually have a few sitting in the freezer as I often cook them up and he has them sliced cold in sandwiches.

Fortheweekend · 04/12/2020 19:40

Ease to cook, just pop the whole thing in the oven for 45 mins.

I'm making a nut roast (from a pack). I rehydrate the mix and then add a pack of made up stuffing mix. It all goes into a loaf tin to be cooked.
It can be reheated and lasts a few days in the fridge. It's lovely with onion gravy.

anomletteandaglassofwine · 04/12/2020 19:45

We are having Beef Wellington and a vegetarian Wellington, there are a few recipes if you google, usually with butternut squash and mushrooms instead of the meat.

70isaLimitNotaTarget · 04/12/2020 19:56

Dh,DD and I are vegetarian
The Quorn Roast here and a side of Lidl Carrot and Cashew Loaf ( instead of stuffing)

The Quorn Roast will sit happily in its wrapper for a while then when you slice it and put the gravy over it's good
Don't overcook, it goes dry .

I di nut roasts on other days but Christmas Day is one to keep it simple .

Stompythedinosaur · 04/12/2020 20:08

I'm doing delia's roast veg, mozzarella and pecan strudel. It is delicious and I like that you can make it up the day before so it just goes in the oven on christmas day.

We're not vegetarian but try to eat meat just for an occasional treat. This recipe we LOVE and always comes out perfectly.

Oh and last night we had Jamie O's cauliflower cheese / that was lovely too (obviously omit the bacon!)

I always have the quorn roast too, it goes brilliantly with (veggie) gravy and is lovely in sandwiches, sliced with bubble and squeak etc. Stops people feeling too 'different' too.

RemusLupinsBiggestGroupie · 06/12/2020 16:30

I've got a nut roast from M&S and have frozen it. Should do the 3 of us who are largely veggie nicely.

Scout2016 · 06/12/2020 19:25

Another vote for quorn roast. Does for sandwiches after too. Nut roast is too much like another helping of stuffing, albeit different stuffing, and I want gravy all over my dinner so I want something that goes with gravy.

Thedot90 · 06/12/2020 20:19

I’ve been pescatarian for 2 years and am surprised by the number of recommendations for the quorn roast - not something I would have ever thought to pick up!
Last year I had the M&S veg tarte tatin which was lovely - all my meat eating relatives wanted a bit as it looked lovely too.
I may get a quorn roast and then something similar to last year and have bits of both as I’m sure my family will help clear up the leftovers.
Waiting for the papers to start doing the reviews on all the best veggie offerings, and will keep an eye on this thread too!

Fueledwithfairydustandgin · 06/12/2020 21:21

I use the quorn roast to make a wellington. You slice it then fill it with stuffing (so it looks like a sandwich) then wrap in pastry. It’s so good

Northernlass99 · 07/12/2020 12:30

I like the Quorn roast but I have that for a regular Sunday roast so it doesn't seem special enough.
I've made this nut roast, it is really very good and you can make and freeze in two batches in advance. Goes lovely with gravy.

I'm making a shepherds pie with lots of different mushrooms, green lentils, red wine, thyme...and the mash will have cabbage in it . Making it Xmas eve so nothing to do Xmas day except roast veg.

DoNotPost · 07/12/2020 14:41

Extra roast potatoes, veggie stuffing, if I'm organised enough maybe some yorkshire puddings, plus all the normal vegetables and sides. We have several vegetarians in our family and no-one ever wants a special veggie dish, just lots of roasties and all the trimmings (just minus the meat).

pinkksugarmouse · 07/12/2020 14:49

I'm Vegan and not a fan of Quorn (some is now Vegan, most isn't) but most new vegetarians seem okay with it and for the first year I would keep it simple for yourself.

Remember that how you prepare your gravy and veg will matter too. No turkey giblets in the gravy or goose fat on the roast spuds. And make sure you put your meat lower than the veg so there is no spitting. Careful too with cross contamination from spoons, tongs etc when cooking and serving.

Carving the turkey away from the table is far more sensitive. Tearing up a bird isn't a very nice sight for a veggie or vegan and can make people feel quite queasy.
Maybe offer them the chance to join the table after the turkey is carved if this is important to the meat eaters.

pinkksugarmouse · 07/12/2020 14:55

I now make a very elaborate nut roast but make it up the day before because it is time consuming. A packet nut loaf just wouldn't cut it for me. It's so nice though and DH (meat eater enjoys it too). Maybe they can make their choice of main next year.

Inthetropics · 08/12/2020 04:46

I can't stand quorn but know that many vegetarians like it. I'll be having a pasta dish with cashew nuts and cheese and a panzanella salad (both very easy to make and delicious; tons of recipes online).

Graciebobcat · 08/12/2020 05:05

Nut roast is very easy to make. Otherwise there are some very good wellington/pastry type dishes. Think luxury and calories- chestnuts, nuts, cheese, mushrooms, pastry. Whatever I make the meat eaters always have slices of with their turkey as well Xmas Smile

merlotormalbec · 08/12/2020 07:02

I've brought a ricotta stack from Mns for my veggie sister. I thought it would be too heavy but that's what she wanted over the nut roast. It looks lovely!

Equimum · 08/12/2020 09:04

We have ordered the M&S nut roast this year, but will also do a Quorn roast as the kids love it.

Other years we have made mushroom, chestnut and blue cheese Wellington, which always goes down well (saving it for NY this time).

PhantomErik · 08/12/2020 10:01

ttigerlilly · 08/12/2020 10:03

The Quorn Roast is absolutely gorgeous. Even my meat eating partner loves it

Aldi have their own version too which I am having on Xmas day!

PerditaNitt · 08/12/2020 11:41

M&S ricotta stacks are lovely. Their ready made nut roast is also yum, but I loved the ricotta stacks last year so will have those again this year (yes, I know ready made is lazy, but hey ho, more time to eat!)
