How do you cook your vegetables?

Just had a read of some veg-prep threads, and glad I can do it the night before!

Other than roast potatoes and parsnips, what do you do differently with your veg? I’ve seen people mention something about bacon and sprouts - I don’t have any bacon, but is there a nicer way of cooking sprouts and carrots other than simply boiling them?

I mash par boiled sprouts with chopped chestnuts, nutmeg, pepper and creme fraiche and bake again. Really good!

Also always do Delia's cheese parsnips, but add cornflour as well as flour to the coating for crispness.

Yep as pp said honey roasted carrots is yum, I also put chestnuts and pancetta with brussels - just sautee them after parboiling with the meat and nuts and a bit of black pepper. I also mix a small sweet potato in with my mashed sweed to jazz up the flavour and colour. You could braise some red cabbage with apple sauce and currants too - that's lovely. Crushed peas with fresh chopped mint and a little butter

I always just boil the sprouts for 5 minutes max and then fry them with bacon pieces. I don't think anyone would eat billed sprouts. Roast the carrots like potatoes (toss big pieces of raw carrot in seasoned oil then on a tray in the oven).

I don't boil any vegetables, I steam them. I find it much easier to get the timings right and they never go too mushy. I tend not to do anything fancy with them, usually, but I might use honey glaze on carrots if I remember.

Homemade roast potatoes in the oven, made braised red cabbage in the slow cooker this morning and will reheat in microwave tomorrow. Carrots and parsnips will be cooked in the ActiFry with olive oil and honey. I bought frozen sprouts and bacon from ASDA, just need to cook in the oven or microwave.

We steam sprouts and carrots, might toss the sprouts with some crispy bacon lardons but on the whole we like our veg plain. Roasted veg are too sweet and we definitely don't want honey or maple glazes. No cheesy or creamy sauces either. I do roast a few bits of parsnip for my mum but they are too sweet for the rest of us. No braised red cabbage either, I know its traditional but I don't think it goes at all.

I roast carrots and add a drizzle of honey on. Parsnips I roast with a bit of maple syrup. Sprouts get boiled while I fry diced pancetta, then I add the cooked sprouts to the pan and fry them for a minute or two.

Everything will be covered in gravy and/or bread sauce, so I don't do anything much with the veg besides steam it. Roast the potatoes and parsnips in goose fat though.

I'm doing glazed carrots cooked in orange juice and butter this year, Jamie's gravy is currently cooking in the oven.

I just steam my carrots but with the sprouts I steam them a bit then saute them in butter. I've got some chestnuts to go with them this year.

I.loathe gravy ( though I serve it for others ) so.my veg have to be tasty, nothing worse than a load of steamed or.boiled veg with meat for Christmas. Fine for a normal.meal.bit not for my Christmas lunch! I roast carrots and glaze them with honey, butter and balsamic vinegar dressing. . I stir fry chestnuts and parboiled sprouts and roast parboiled parsnips so they are really crispy. I also do mash as well as.roast potatoes and have peas with mint and butter

Carrots and parsnip fried in butter and baked in maple syrup.
Potatoes roasted with rosemary.
Brussels, peas, broccoli boiled or steamed.
Cauliflower baked in a cheese sauce.

I am a heathen. I am also the only person here who eats sprouts - and I like them over-boiled until soft, with lashings of melted butter and white pepper. Sprouts may indeed be lovely cooked with chestnuts and pancetta, but they're not what I want for Christmas dinner!

@Gotthetshirt23 oh no, buy them vacuum packed ready done!! The last thing you need is peeling those buggers as well as the sprouts!

Or if you already have them, roast them until blackened a bit on the shells and sit down and prepare to peel a good while once they are cooled enough to handle. They are tastier, but a lot of effort to just put in sprouts. We love doing them that way on open fire and eating them plain.

I steam my brussels (so they are crispy and tasty, not soggy). I roast carrots, potatos and parsnips (I do a maple and mustard glaze on the parsnips). I fry cabbage in butter.
