What cheese to make a cheese board?

Just that really what cheese do you buy to make a cheese board? What wine to go with it? Do I need pickle like Branston? What else apart from crackers to go with it? And do I need to buy/put it on a wooden chopping board? Sorry that was a lot of questions, I am a cheese board virgin.

Brie
Stilton
A spicy cheese eg chilli cheese
A good old cheddar
Love Wensleydale and cranberry (Christmassy)

Red onion chutney
Grapes, celery
Red wine/port

Trills · 14/12/2018 19:15

A hard, a soft, a blue, and a goat.

Trills · 14/12/2018 19:16

I hate cheese with bits in, but if only one cheese on the board is like that I wouldn't complain too much.

tinseltitsbumfannythelot · 14/12/2018 19:16

You need, imo, a cheddar, a soft cheese, a smoked cheese, a blue and another one that takes your fancy. I'm not fussed by chutney or pickles. Oatcakes are good enough for me.

A large glass of port always goes down well too.

I bloody love 🧀

Stilton
Brie
Camembert
A soft herb one like a Roule or Boursin
Wensleydale
A good mature cheddar
Grapes and apples to go with
Mixed box of crackers
And I like having a caramelised onion relish as opposed to a pickle but you could do either or both.
This would be my cheese board. Not too fancy, bit if everything 😃

Kittenrush · 14/12/2018 19:17

Ooo yeah a smoked cheese too

OkToday · 14/12/2018 19:17

Grapes is a good idea thank you. Any suggestions on wine? I don't drink so have no idea what to buy but but I would be guessing at a red.

I've saved this thread as I have been tasked with doing the cheeseboard this year!

Really a preference thing red wine.. something full bodied

But port is the more popular choice
Graham's

AnnaMagnani · 14/12/2018 19:19

A blue cheese, a soft cheese, a hard cheese, a goats cheese and any other cheese that you like.

So depending how many people your cheese board is feeding a classic like Stilton, hard cheese could be anything from Wensleydale to a mature Cheddar, soft cheese eg Camembert or Brie but make sure you have aged it a bit, and then a goats cheese.

Pickle - nice chutney, not Branston. Other bits - grapes.

Wine - choice of white and red

Cheats choice - buy a ready made cheeseboard from a supermarket.

AndNoneForGretchenWieners · 14/12/2018 19:19

Soft cheese - go for something like Vallage or that brie with truffles in.
Definitely a cheddar, a blue, something crumbly like Wensleydale or Cheshire.

Waitrose Christmas cheddar with habanero chilli, waitrose Christmas Yorkshire Wensleydale cheese, waitrose Christmas Stilton with mango and ginger, waitrose double gloucester with cheese and clives, waitrose Christmas Shropshire blue and waitrose mature cheddar strenght 4. Is that selection of cheese ok?

I wrote this down from another thread...

Hard cheese
Blue cheese
A rinded soft
A soft
Feature cheese.

Goat cheese has no reason to exist. It is rank... especially when made with summer milk. It tastes exactly as boy goat sperm wee mix on the backs of the nanny's during he rutting season smells. Nasty horrid and rank.

AnnaMagnani · 14/12/2018 19:53

I'd say of your choices you only want one cheese with bits added, all the rest should just be cheeses. They are a bit novelty. The Christmas Stilton with mango in particular sounds like a crime against cheese.

Also Waitrose mature strength 4 will prob not be OK for cheese snobs. You need Cheddar from the cheese counter.

Hard, blue, soft, goat, max one novelty.

Seeing as you shop in Waitrose just buy a cheeseboard there.

Chewbecca · 14/12/2018 19:59

No, too many fancy ones in your list and you have 4 hard and 2 blue. You want one blue, one hard, one soft. Plus a goats if you want a larger quantity.

  • swap the stilton for a regular stilton
  • you don't need cheddar and double Gloucester - drop the DG
  • drop the Wensleydale and the other cheddar
  • add a brie or camembert (soft) (no added fancy stuff)
Chewbecca · 14/12/2018 19:59

If you're shopping in Waitrose - their black bomber chaddar from the cheese counter is a good choice for the hard.

Ragwort · 14/12/2018 20:00

If you shop at Waitrose just ask one of the assistants to put together a recommendation for you and suggest the wine to go with it. Easy Smile.

DoubleNegativePanda · 14/12/2018 20:01

@Unescorted thank you. Everyone I know (includeding dd) love goat cheese and I think it's absolutely revolting. Tastes like a nasty goat pen smells. I honestly can't understand why people eat it!

Bagadverts · 14/12/2018 20:08

Great info here about proper cheese boards. However I’d also say have a cheese you like. If you like strength 4 cheddar have it along with the others. Or if have a DC who likes dairy Lea triangles and might want to join in why not have a couple of those as well.

goose1964 · 14/12/2018 20:13

We have enough cheese to sink several battleships, my overall Christmas favourite is red Windsor, basically a cheddar marbled with either port or slow gin

AnnaMagnani · 14/12/2018 20:16

Having gone to our village cheese and wine, nobody ate the chilli cheese.

Mountains of cheese were eaten that evening, but the Mexican chilli cheese was barely touched.

I'd dump that one.

OkToday · 14/12/2018 20:22

Ok, I do shop at Waitrose but online so I can't ask in there for advice. I can however order cheese from the cheese counter that is not a problem. I have looked on the website but can't seem to find a ready made cheese board.
