WTF am I going to cook (multiple dietary requirements)

Have family staying over Christmas and need to cater for a couple of evening meals - doesn't have to be particularly fancy but does need to take in everyone's dietary requirements which include:

  • Pescetarian
  • Allergies to dairy, eggs, sesame, pulses, nuts
  • Intolerance to spicy food / onions / pepper
  • Can be cooked in a small kitchen!

Short of giving everyone jacket potatoes and salad I'm at a bit of a loss Confused

Ideas welcome!

Is Tofu dairy or pulses? Noodle dish with Tofu if not

Pesto cod parcels with roasted Mediterranean veg, tenderstem broccoli and roasted baby potatoes.

Bit fresher after the Christmas stodgy too.

Also OP, google vegan recipes (nut free). Plus, from scratch, dairy is extremely easy to avoid if you use say oat milk and cheese / butter alternatives. Ditto egg but you need to know what to replace it with, which is a bit more research.

Salmon stuffed with artichokes and pesto (nut free), wrapped in puff pastry (the premade pastry I bought at Waitrose/Tesco was egg and dairy free).

We're used to cooking without meat/eggs/nuts (those requirements belong to me/DH/DC!) but was struggling to add the lack of dairy and spice to the mix!

Fish and chips is a good call and perhaps roasted veg pasta.

Most dry lasagne sheets are egg free if that helps Smile I know Tesco’s are!

Have definitely found dry lasagne without egg but it is less common than with egg. Aldi might well be!

Salmon/fish parcels good as can make some with spice/garlic and only those who can't have to do without seasoning. Quite a lot of pre prepared pastry is egg/Dairy free - only premium ones seem to contain dairy! Work fine.

Fajitas with a selection of separate fillings so that people can add what they like

Pasta with tomato sauce (make the sauce with just tomato, garlic, basil), with cheese for those who want

Make your own pizzas (there must be some vegan cheese alternative for the person allergic to dairy?)

Roast dinner with a vegan main too (I like marinated baked tofu)

Day 1, roast salmon and roast meat with various sides. Include Braised red cabbage, as this can be made in advance and even improves for freezing. People can pick something to match their dietary preferences.

Day 2, leftovers and salad.

Or something like this laurencariscooks.com/vegan-miso-noodle-soup/ (the sesame and onion are added at the end so optional for those who don’t eat them. You could also have extra toppings like pre-cooked meat/fish or fresh chilli)

Do some pesto sauces contain cheese?

I would make a rich tomato/aubergine sauce topped off with olives and anchovies for spaghetti and then a salmon dish.

Some pesto has cheese, but it is very easy to make a pesto like sauce with leafy herb of choice and extra virgin olive oil in a blender... my sauce book (from the Works) so not posh...

Sauce book has about 20!! Some with cheese, most with something nutty hut principal is the same!
