Thinking of chili and garlic prawns, confit duck legs, roasties, red cabbage, carrots, Christmas pudding with brandy butter. There's probably only 3 of us

Just the three of us (everyone is at ours for Christmas Eve tea) for Christmas dinner and DD4, probably won't eat much but it will still be a feast.

Rib of beef or 3 bird roast,
Maple syrup roasted parsnips
Carrots,
Sprouts,
Red cabbage,
Cauli cheese,
Yorkshire puds,
Roasted pots,
Pigs in blankets,
Stuffing balls (maybe wrapped in bacon)
Gravy.

I'd happily not bother with potatoes but may have 1 on my plate

Starters don't often happen, if they do they are usually ready made pate type things, and puddings get eaten much later - such as the next day. I love Christmas dinner!

We have flirted with different birds and come back to duck year before last dh did it, stunning. What duck do you buy? I think it was Gressingham that was the impressive one however, we did queue for a hours and got an Aylesbury duck once but that was disappointing. So may I ask which duck and how!

IncidentalAnarchist i know i know there my guilty pleasure. Although this week I had morrison cafe sasuages which were very tasty they are there butchers range i think so think i might do them instead.

I think I live in a different world... no wonder there is so much talk (in October) of stressy Christmas prep.

We will have -
standard Christmas morning selection box starters, with a glass of wine
a roast dinner with the addition of pigs in blankets, with a couple of glasses of wine
maybe some Christmas pud and custard (usually too full from main) a ton of Quality Street in the afternoon, followed by a boozy fuelled snooze.

I don't normally do red cabbage but see a lot of you do. I might give it a go this year.

What recipe do you all use?

Would love to do roast veg but would not have the oven space. It's difficult enough to juggle roast potatoes, yorkies, stuffing, sausage meat for 18 people.

Leaves we get a Gressingham, not huge (only has to feed DH and I and small amount for DD + enough for leftovers-hash on Boxing Day).

We pierce the skin to allow the fat out and cook it very hot for the first 15 mins then at 180' for the rest of the time.

We've bought especially nice ones from the local butcher, and the standard one from Sainsbury's/Waitrose and have noticed any real difference.

I really want goose this year, but having never tried it, need a test run some time in November to make sure it's not a horrible, expensive and greasy mistake.
