Bread sauce - yay or nay?

So I've never made, or indeed eaten bread sauce, but wondering whether to give it a try this year - I don't eat turkey, or much dairy really so can't see the appeal of thickened milk. However I do like to please my guests.

So, tell me wise ones, is bread sauce a deal breaker for you?

However don't bother if your guests are used to packet versions as they'll prod yours doubtfully and eye it with suspicion [looks hard at relative on The Other Side of the family] Angry

It is the best bit! Turns dry turkey and overdone sprouts into a delicacy. My MIL didn't have it one year, next year I arrived clutching packets of the stuff. She's got the message Grin

I only ever do it for Christmas and I do cheat and use a packet mix. I think I might be the only one who eats it as there is always quite a lot left over. I quite like it though and as I do the Christmas cooking it's staying on the menu.

Had an emergency email from DD asking for my recipe as she wanted to make it for Thanksgiving. Apparently it went down really well but maybe they were just being polite Grin

I hadn't made bread sauce until a few years ago. The idea didn't appeal to me, it sounded like stodge.
But I tried Delia's recipe and OMG it is good. It's like eating delicately flavoured fluffy clouds. I make it every year now.Smile

You can't have Christmas dinner without far too much bread sauce and far too much cranberry sauce.

When your fork has turkey, mash, gravy, bread sauce and cranberry sauce its like a mystical potion brews in your mouth and the taste is as close to nirvana as mere mortals can get. IMO anyway.

NoSuch can't remember where it was from but: peel onion and cut in half. Stick 3-4 cloves in each flat side and put them flat side down in pan. Cover with milk and add a couple of bay leaves, pinch of nutmeg and a handful of peppercorns. Bring to almost boil agonisingly slowly then turn off heat, put a lid on and leave it till you're ready. Then sieve the milk, add a knob of butter and a splash of cream and breadcrumbs till it's the right consistency. Heat it back up and add more milk/breadcrumbs till it looks right.

God I could eat it for breakfast right now.

God I love it. Without it, Christmas dinner is just a roast.

But make it properly with whole milk and maybe a lot of splash of cream. Do not attempt a slimming version with skimmed milk

An absolute MUST! My husband's family don't serve it, so I take my own little bowl when it's our turn to have Christmas at theirs. Christmas dinner is just ruined without it!
