Naice vegetarian option

DM has always cooked dinner at her house for me, uncle and DGran.

Trying to cut a very long story short, I'm doing the cooking at my house this year, will be making a chicken for DM, DH and me but stuck for what to make for vegetarian uncle.

DM always just gave him a big plate of potatoes and veg which he has admitted he doesn't really like.

What nice vegetarian option can I make for him that isn't a nut roast? I've had a look at the BBC food site but nothing really jumps out!

Most of our Christmas dinner family are veggie, and the popular options here are:
Homemade nut roast and/or vegetarian haggis (bought), + veggie sausages, + stuffing (homemade), veggie gravy, and all the roast potatoes, veg and normal trimmings.

That's all pretty easy to prepare. A bit of chopping and blending of ingredients the day before. And then just shove it all in the oven.

It's decided. I'm definitely going for the mushroom Wellington! I'll definitely need to try some of the other ideas anyway though, they look delicious.

DM likes the sound of it too and says she quite fancies the veggie option now. Should I just give her a plate of potatoes? Wink

My super easy go to veggie Christmas option is to do a big fancy sausage roll type thing.

You will need:

Sheet of ready rolled pastry
Veggie sausage mix (Granose do a good one)
Optional: stuffing, cooked spinach, cooked chopped mushrooms, etc

Make up the sausage mix according to packet instructions.

Lay out the pastry and put a big line of sausage mix down the middle.

On top, add your stuffing, spinach, whatever you like.

Fold over the pastry, brush with milk/egg, bake according to pastry instructions. Slice. Serve. Enjoy!

I used to be veggie & had a vegan partner. We liked a veggie version of couibiac, with a sauce (mustard cream, cranberry, whatever) on the side. Goes really nicely with vegetables. The one we made had a rice, mushroom & leek filling.

Granose is what was Sosmix I think - it works in pretty much exactly the same way anyway! It's in green boxes, we get the Lincolnshire sausage one (for the sausage roll anyway).

Oh, if you make it though, just don't put too much filling in or it may split open in the oven!

Thanks, Ugh. I think dp fell in love with me over 20 years ago because of Sozmix sausage rolls. It would make us day if I could make him a giant one! Will definitely see if H&B have it, next time I'm in there.

Sosmix still exists but is hard to find-granose isn't as nice, asda own brand is closer to actual sosmix.

I would be happy with a nut roast, I would check with your uncle to see what he likes.

I think it's the Lincolnshire style sausage one. That's what's in our cupboard anyway. We have the burger mix too, it's pretty good!

I made a tomato, caramelised onion and goats cheese tart tartin one year, which went down well. Last year I made chestnut bourguignon pie, which was amazing. No veggies to cater for this year, but I might just make the pie again anyway! It's on the BBC website.

I'm a veggie and not very keen on the 'veg in creamy sauce in pastry' cliche.

If it was for me I'd prefer something with pulses - say spicy chickpea/lentil patties or freshly made falafel...
