DM has always cooked dinner at her house for me, uncle and DGran.

Trying to cut a very long story short, I'm doing the cooking at my house this year, will be making a chicken for DM, DH and me but stuck for what to make for vegetarian uncle.

DM always just gave him a big plate of potatoes and veg which he has admitted he doesn't really like.

What nice vegetarian option can I make for him that isn't a nut roast? I've had a look at the BBC food site but nothing really jumps out!

I've made Parsnip, cranberry & chestnut loaffor the last few years as my veg alternative. It can be made the day before and popped in the fridge overnight. I love it because it's like a 'straight swap' for the meat alternatives - all the standard side dishes still go well with it.

How did that dish turn out? I think it was in last year's BBC Veg mag and I wanted to make it but wasn't sure. It does look delicious though.

Well done on making something for him. I've been veggie since I was 8, and have suffered the plate of vegetable thing whilst others all have meat etc. Your DM sounds a little mean with her attitude towards the Uncle, so its really nice to hear you're putting the effort in. Hope it goes well!

whereyouleftit that looks lovely, I'm going to do it for myself. I'm not that keen on pastry (and there's enough of it at Christmas anyway) and I hate goat's cheese. Pasta and rice are just a bit "everyday" however much you jolly them up. I like a good veggie loaf.

I'm the only veggie here again nowadays, so I tend to do something that is minimum fuss and takes up v little space, or that can serve as a side for the carnivores. Usually this involves doing a ponced up stuffing of some sort, or stuffed squash, or a tiny pie, or (totally lazy option) just roasting a couple of big mushrooms with garlic butter and herbs.

SuburbanRhonda it turned out great. Actually reading the recipe again I've remembered that last year I shortcut it a bit. Instead of simmering cranberries and sugar into a sauce I just used a jar of it - I didn't taste any difference. A few of the carnivores had a bit alongside their turkey too Grin!

Haven't done this one for a few years because I found making the 'suet' pastry a bit fiddly, but it went down well enough for me to make it two years running - Mushroom and Chestnut Puds with a Rich Red Wine Sauce.

I do a parsnip and cashew nut roast Wellington with a layer of brie and cranberry in the centre. I usually make it for either Christmas Eve dinner or for Boxing day lunch but it's a fab veggie main and great cold.

I'm cooking for 10, including one veggie who doesn't like pastry, cheese, pasta or bread and is allergic to oranges Hmm.

It's a bit of a challenge, but usually some sort of veggie/nut loaf is made in advance and warmed up in the oven on the day.

The Mushroom Wellington for me, I think I'm going to use pesto and Gruyere cheese though.

Suet pastry is easy.

You use twice the floor to suet then add cold water until it comes together into pastry. If it too wet then just add more floor.

Roll out using plenty of flour to stop it from sticking, to about a cm thick.

Bellejournee - if that's for a proper vegetarian, make sure the pesto and Gruyere ARE vegetarian as most aren't!

Thanks musidora - it's for me, I'm not a full veggie as I eat fish, so although I check ingredients, I'm usually ok about certain ingredients.
