Could you make some kind of filo parcel filled with whatever you fancy? I do that for veggie guests. Easy to do individually with filo sheets.

I just want something small tbh, as we won't be around the next day, and the meat eaters will have plenty to eat! Usually I do a big stuffed mushroom, or just buy a nut cutlet.

Holland and Barratt and similar shops do some nice frozen fake chicken things - maybe try a few before the day so you can get one you know you'll like? Then have all the same roast veg, stuffing balls etc as everyone else, maybe with your own veggie gravy. If you're a gravy monster like me then M&S do ready made proper gravy, I assume they do a veggie one as well as the chicken one?

I usually just have loads of the veg and vegetarian onion gravy. Sometimes veggie sausages - but I can take them or leave them tbh.

Have bought the M&S veggie roast a couple of times.

Roast stuffed butternut squash?

I would go with a higgedy pie. They are delicious.
And it could be served with all the roast potatoes and veg, provided you used olive oil not the fat from the meat. Potatoes roast very well in olive oil and garlic. Easy to pop in the oven and no preparation.

Yesterday in waitrose they had some lovely mushroom thing in filo. I was eying it up for our christmas dinner.

Everything will be veggie, except whatever meat the carnivores have. Roast bns is gorgeous, and have done before - but to big for just one.

I would go with the individual pastry idea. Done it in the past stuffed with various things, although I think the mushroom wellington sounds lovely and dead easy to do for one. The the past I've also done a red pepper and parsnip tarte Tatinbut that's more awkward to do for one.

Mini harlequin squash, scoop the middle out and bake with marscapone, garlic and thyme in the middle, perfect size for one person!

I've done a red wine, mushroom & chestnut risotto in filo for years - exact recipe was a JO one in a Sainsburys magazine, but a bit like this holygravy.blogspot.co.uk/2011/04/red-wine-risotto-of-chestnuts-mushrooms.html.

Make the risotto the night before, then on the day drape buttered filo sheets along a baking tray so that they fall over the sides & cover the base. Fill with the risotto, drape the pastry back over the top, use additional scrunched filo to cover any gaps. Bake for about 30 minutes.

Makes more than one individual one (I've done individual parcels some years) but I've always had the meat-eaters tuck into a slice as a 'side' too, & it's nice cold next day.

Mind you, for just one or two veggies & if I knew no-one else would be interested, I'd be tempted to just buy something like this christmasfood.marksandspencer.com/listing/mains/vegetarian/Mushroom-Wellington.aspx or christmasfood.sainsburys.co.uk/products/vegetarian-sides/taste-the-difference-butternut-and-mushroom-en-croute/, rather than faffing about making something?

I'm usually the only vegetarian - as long as there's roast potatoes & roast parsnips I'm happy :) But I don't cook Christmas dinner and I hate to put someone else to any more trouble, even if it's just heating something up from M&S or whatever, it's one more thing to think about and I'd rather they didn't have to bother just for me. If you are doing it yourself though and can be bothered there are lots of options ^ :)

Hak I am, but The Chef of the day is very careful and wouldn't put the meat where it could spit onto anything I would be eating. They have a big electric range anyway, so I think the meat pretty much goes in it's own oven.

Ok, so it's not exactly fancy, but what about a couple of Linda McCartney sausage rolls? I bloody love them, and they'd go with all the veg and trimmings. Plus, quick easy and don't take up much oven space. And extra helpings of roast potatoes, of course, since you can't have the meat Wink

Incidentally, my lovely family always do some fancy veggie dish for me when is me more than happy with a couple of veggie sausages (I love all the trimmings at Christmas). I keep trying to tell them, but they think they're short-changing me.

hak turkey doesn't taint the other things in the oven (and we've discovered roasting bags), unlike, say, lamb (bleuch).

I don't eat meat, but also hate things in pastry for Christmas lunch. There is enough stodge around as it is! Seems like a bit of a cop out too. Love a good nut roast though.
