Must haves on your festive cheese board?

I am a massive cheese lover - French, stinking, oozing sorts especially - but after 2 pregnancies am a bit out of the habit.
Really looking forward to a Boxing Day cheese board - but am catering for PIL who prefer mild, hard traditional cheese so am looking for a mix of crowd pleasers..
What do you have?

I don't think anyone's mentioned Hereford Hop. Yum. Everything else I'd have has been recommended.

Friend had a cheese wedding cake for her 40th last year. By 1am I was sat at a table with the cheese, and my wine glass magically refilling itself; I don't think I've ever been so happy in my life. Grin

I've just made and frozen some fig and Stilton sable dough today to make little biscuits. Get some other nice crackers in. Crusty bread. Grapes. Sea salt butter.

My must have cheese at Christmas ( or anytime really) is a French one called Langres. It is best eaten really ripe. It stinks to high heaven but tastes amazing.

Any cheese experts out there who know if Tomme is ok during pregnancy? I used to by it from a really good cheese shop near us, but spotted some in lidl today and bought it! No indication of whether it's pasturised or not though. They had some Comte too, but it had a big warning sign saying unpasturised!

DH and I had a big discussion over this earlier Xmas Grin. We're both massive cheese lovers but I only like specific types, LOATHE mouldy cheese and anything too strong, hate goats cheese.

We decided on;
Cranberry wensleydale
The christmas pudding white Stilton truckle from waitrose (looks and sounds AMAZING and will make an incredible centrepiece on the board Wink)
Red Leicester
Mature cheddar
Boursin
Possibly Edam.

Epoisses, Roquefort, Camembert, Taleggio and Ski Queen brown cheese.
I love them all. Will probably do a couple of hard cheeses too.
Is it weird to put a Parmesan type thing on a cheeseboard?

In addition to all the usual cheeses, I would go for Comte, Waterloo and Wyfe of Bath and quince paste and some really good red onion marmalade.
