What meal to make for guests on Boxing Day?

I have family staying with me Christmas Eve - Boxing Day.

Christmas Eve meal is going to be ham, salad, maybe a few little quiche type things, probably a chocolate roulade/Yule log for pudding.

Christmas Day - turkey etc.

What to have on Boxing Day? When I was a child, my mother used to reheat turkey, but more recently, she has become fixated on having roast pork. I don't mind either but now it is me doing the hosting I wonder if I should do something different?

If it was just my family, I would have turkey hash but I get the feeling I should not offer turkey on 2 consecutive days to guests. However, I don't really want to do roast pork and all the trimmings having done the full Christmas dinner the day before.

So what are you having on Boxing Day? Or rather, what would you serve to guests in my situation? Thanks!

look up chicken pampered chef ring. Make it with leftover turkey. Looks really posh and tastes fantastic!

Boxing Day is made for leftovers surely?! I think nice bread and cold meat and condiment/salad bits so people can make sandwiches. Or turkey curry or fajitas if you want something hot. Yum!

Definitely not another roast

I'd do cold meats, including leftover turkey, salad, relishes, baked potatoes
Crackers to make it festive

Pie? I went to someone's once just after Christmas and they made a fantastic pie with leftover meat. I do think leftover meat is fine though as cold cuts, if you do nice salads and baked potatoes and the like.

Put out the leftover turkey and ham and serve with pickles, fried eggs and homemade chips. Best meal of the holiday!

Buy some puff pastry and use left over turkey and cranberry sauce to make pasties or tarts with them. Could also use left over ham and cheese in other ones. Serve with salad and potatoes

Cold turkey, ham, bubble and squeak with the leftovers from Christmas Day, pickles, salads, pate, cheeses. I love boxing Day lunch.

We will just have left over meats and cheeses the next day at my aunts. Then the day after when the ILs come we are doing a cheap and cheerful carbonara as the two days before will be very hectic.

I'd do something completely different, and produce a fish pie. Stick the turkey into the frdige or freezer for another day - you could make the pie up and freeze it in advance.

My mum always does lasagne, salad and garlic bread on Boxing Day. Everyone always comments how relieved they are not to be having roasts/meats!

Me too YoDiggity, especially when it is the same people you are feeding as you were feeding on Christmas Day. If it were a whole bunch of new people I might just get it, but not when it is the same bunch.

Out of interest everyone who mentioned Jamie Oliver's recipe, is this it?

My DH has just said that he thought I was going to cook another full Christmas Dinner on Boxing Day for his parents! Seriously! Does he not know me at all? Why on earth would I cook the same meal twice in two days. Apparently they are expecting it! Well they are going to be surprised with the ham and mash that I've planned!

Guttersnipe, yes that's basically the one (though slightly adapted) but Jamie just uses plain old puff pastry in his original recipe and its really delicious. Also works with leftover chicken so it has become something of a staple in this house.

If they like pork would you consider pulled pork? bit more interesting than just roast pork and you could serve on nice bread with coleslaw.

I am doing cold meat, jacket potatoes, cheeses, salad, coleslaw, crusty bread etc.
We are on the Boxing Day shoot and DPs will be home alone, waiting for their friend to arrive at our house don't ask This way I can be pretty much prepared in advance, get home and whack the spuds in the oven, shower and change then dinner will be well underway.

I've made this before when we've had family for Boxing Day rather than Christmas Day. It's a good way to use all that leftover turkey!
