What do you eat just after Christmas...the 27th 28th ?

I need inspired.
We are out 25th , 26th it is the roast either turkey duck or pheasant and all trimmings.
Fridge space is limited but I really don't want to go back to the supermarket until 31 December so inspire me what do you have to eat after boxing day?

Don't want to spend ages cooking either.

Usually light dinners leftover turkey and chocolates.
Then on New Years Eve we usually have roast pork and all the trimmings, then on New Years Day a steak pie, mash and other bits.

Actually we spend most of that week finishing off the meat from christams day. I do a ham on boxing day so there is even more meat.

Then it is a case of meat sandwiches, meat salads, soup and plain normal meals like beans on toast.

We eat out during that week too so that breaks it up a bit.

The fudge and orange sweeties that no one wants are always left at the bottom of the quality street tin Grin I wish there would be left over after eights but I always polish them off before Christmas Day Blush

Would love to be one of those domestic goddess types that use the left overs to come up with some thing marvellous!

Cold meats, salads, dips, crisps - all the leftover stuff. If I'm very lucky, there will be some ingredients for bubble and squeak.

I usually make a huge cottage pie the week before and lob it into the freezer, plus have a couple of those Mexican Kits and chicken breast or mince on standby. I know, I know, never eat food with the word 'Kit' in it but it is Christmas and I don't want to spend the week cooking.

I find we all get very bored eating rich or unusual food and want something simple for the last part of the week.

Cheese, cold meats, bubble and squeek, cheese, more cheese, dips, crackers, chocolate, more cheese, smoked salmon pate, brussels pate, matchmakers, turkey fajhitas, lots of ham sarnies with lots of diff chutneys, gerkins out the jar, cocktail cherrys (they have a posh name but can't remember) and more cheese.

We trudge through way too many chocolates and sweet things that have been bought,and we want to 'get rid off'.
I'm determined this year not to get ANY sweet crap (one box of chocolates is quite sufficient,and someone will usually get one as a present).
Instead I'm going to get lovely crackers and cheeses,and olives,and pickles.Just delicious real food that's good to pick at.

On Boxing day we usually have cold meats/chicken, pickles, baked potatoes etc. On 27th it's usually a chicken, ham and leek pie or something similar made with the left over chicken and ham (we prefer chicken to turkey). The day after that I usually make something with salmon, as I'm fed up with chicken and ham by then! Also I don't usually end up cooking every day between Christmas and New Year because we see a lot of friends, so some days we are at their houses and they cook.

I made a really nice turkey and leek flan (it was one of Delia Smith's recipes from the Christmas book I think) and it was really tasty and made a nice change from turkey curry and turkey sandwiches! (and it was quick and easy too)

I love the bit between Christmas and New Year - picnic lunches and teas all the way!

Sausages mash and beans! ( just buy an extra pack of sausages when you are getting them for the sausage/bacon thing to go with the turkey and a tin of beans). Another my kids like is take some of the cold turkey, tinned corn, chopped onion, maybe a pepper and any other spare veg and fry it up with some tikka paste and then stir it through basmati rice. Dead quick.
We also like to have a fry up- bacon, sausages , egg , tomato, frozen hash brown. Trip to the chippy or the local Chinese always goes down well too.

Sandwiches. The best thing about Christmas dinner is the leftover sandwiches in the days afterwards, is it not?:) New years I'll do duck or leg of lamb.

Ooh or 2 years ago I made turkey and ham pie, twas lovely with all the leftover mash, roasties and veg. I always have lots of pastry in the freezer - just make double every time I'm making pastry and freeze half. Or leek and potato soup with lots of nutmeg to go with the sambos:)

We have birthday cake - two of the sneaky household have birthdays between christmas and new year. We also have the tradition that you get to choose the tea on your birthday so usually we have pancakes one day and pigs in blankets on the other.

On non-birthday days we emulate the very hungry caterpillar and eat a nice green leaf, we are usually fed up of rich foods and need a light stir fry with plenty of veg as we are all desperate for nutrients.

We've started having our christmas roast on christmas eve - that way I get to spend the day with the children rather than in the kitchen. We've done it for a few years now and we really enjoy doing it that way. On christmas day we nibble on leftover cold meat, crackers and salad type bits. We usually spend the next few days eating up the leftovers so very little cooking. One of my boys has a birthday in the week between christmas and new year and if we're not going out to eat he usually chooses to have tacos.

Crispy turkey chinese pancakes with plum sauce, spring onion and cucumber
Turkey and ham pie
Usual cold platter stuff - I buy in lots of crisps and ready to bake bread, plus coleslaws, pates, cheeses, lots of salad
Sometimes a Thai style turkey curry, depends how much is left

cold ham is great

more economically, Gammon joint roasts nicely, and makes a fantastic meaty ham sandwich, and fries better than bacon with eggs.

potato salad with new pots and Aldi mayo.

I made Deliahs Colonnial Turkey curry one year, it was delish.

The dining table just becomes a constantly filled cold cut platter in our house, left overs mixed with baguettes, cheese board, rice salads, couscous salads, coleslaw, potato salad etc. We just keep adding!!

You can't beat cold turkey, oven chips, peas and salad cream on Boxing Day though Grin

it's all about the m&s christmas range in our house. we just do a little buffet every night until the new year. mini pies, mini kievs, mozzarella sticks, chicken wings, garlic bread, houmous etc... i also do a roast turkey with stuffing and we graze on sandwiches with mayo and cranberry.

i'm thinking of cooking a nice steak & mushroom pie in advance this year and having that inbetween christmas and new year with mash, veg and some of my leftover christmas gravy.

i'm one of those who still watches christmas films and listens to christmas music right up until 1st jan, and from dec 22nd until jan 2nd our house is full of chocolate, alcohol, party food, ice cream, desserts etc.. and that's all we live on!
