I need inspired.
We are out 25th , 26th it is the roast either turkey duck or pheasant and all trimmings.
Fridge space is limited but I really don't want to go back to the supermarket until 31 December so inspire me what do you have to eat after boxing day?

Don't want to spend ages cooking either.

This thread is making me hungry!

We have 'Christmas Surprise Pie' - layers of leftover turkey & roast veg, sprouts etc, with leftovers gravy for moisture, covered with store bought rolled pastry.

The kids LOVE it & it is such a great way to use the scraps!

Cold leftovers, meat, cheese and crackers, Christmas chutney, all that good stuff. I love it, so will have that for a good couple of days.

I have in the past made a nice pie with leftovers. Line tin (springform cake tin) with filo, for filling have turkey/ham, leftover green veg, mushrooms etc., mixed into a cheese sauce made with stilton. Top with filo pastry all scrunched up, and brushed with melted butter. Nice thing is the filling can be with whatever leftovers you have, but the stilton cheese sauce makes it taste yummy. Bake in oven till filo is cooked and golden (as the filling is all cooked anyway).

Usually make Jamie's turkey and leek pie although we don't eat turkey so it is chicken. Plus lots of nibble bits. Homemade soup is in the freezer too and there is always a stock of bacon, eggs, beans and bread so if we fancy beans on toast we can. All very relaxed

nkf · 13/10/2012 07:49

Leftovers and cake.

nkf · 13/10/2012 07:54

I like the sound of Christmas pie.

EthelredOnAGoodDay · 13/10/2012 07:58

Mainly leftovers plus salads, pork pie, pickles, coleslaw and all that kind of thing. We just eat it until it's gone!

jumpyjan · 13/10/2012 17:47

delia's curried turkey salad (v easy and v delicious), jacket potatos, waldorf salad, ham, pickled onions, chutney, cheese, crackers, bubble & squeak (made with potatos and sprouts), stilton souflee omelette (Delia again), potato rostis with cold meats and poached eggs, turkey and bacon pie, sausages with leftover red cabbage, christmas cake, chocs, baileys, nice warming homemade soups from whatever veggies are left around.

My aim is to do a shop around 23rd and not go again until 30th so just before that we are really into whatever is left.

Bitxhong day is all about the cold cuts, sandwiches, leftover pigs in blankets etc (we make extra so that there are leftovers!)
27th maybe a bolognese pre made and frozen, with all the trimmings like garlic bread etc. 28th a curry - again from the freezer, maybe a couple of different ones with lots of sides as a treat. Macaroni cheese would definitely be made one night. I find eating buffet food for days on end makes me feel rough.

janji · 21/10/2012 02:38

Do a kind of help yourself buffet.

Cocodale · 21/10/2012 03:47

Cold meats, cheese and biscuits.
Most definetly after eights £1.50 a box in Sainsburys at the moment I'm stocking up.

We have ham egg and chips, a homemade shepherds pie from the freezer, meatballs (from the freezer) with pasta and chicken/pork/beef in gravy (from the freezer) in a giant Yorkshire pudding (from Tesco - via our freezer). We have a little freezer in the garage - whenever I cook in December I do 2 lots and one goes in there for after Christmas - saves a whole load of hassle - I want a holiday too!

PigletJohn · 21/10/2012 09:33

hello, I was looking for the curried turkey recipie and found this but there seems to be a mistake. Method says "add the curry paste" but ingredients to not include a curry paste nor how to make it. Do you blend spices and fry, or is it a readimade paste?

girlywhirly · 21/10/2012 15:59

It says madras curry paste in the recipe, which will probably be in a jar. Look at Pataks curry pastes which might be the one used. They are very good.

ILikeToMoveItMoveIt · 21/10/2012 16:12

Buffet with the cold cuts. Add bread, crackers, olives, cheese, grapes, pickles etc - I adore good buffet food and I am a cheese fiend.

On a day where we are all sick of eating we have soup. I tend to make it before Christmas and put it in the freezer.

Blueberry pancakes (American style) with bacon and maple syrup have become a tradition too.

PigletJohn · 21/10/2012 16:46

girlywhirly

oh yes, I must have missed it Blush

Those jar pastes don't need cooking do they? when I used to make "authentic" curries I used to mix and fry a paste which gave a much better flavour (but makes the house stink)

serin · 21/10/2012 17:02

Jamie's, Turkey and leek pie here as well, with leftover ham thrown in too.

Soup and sandwiches for picnics (like a bit of fresh air)

Salads with whatever cheese, nuts and leaves are left from Christmas evening.
