Help me compile a list of veggie camping meals

I need some inspiration. I’m not one to camp usually but DP and DC go all the time and have finally persuaded me to join them. DP says they usually eat out all the time when camping and just take snacks. We can’t really afford that right now so need some easy camping meals that aren't just pasta (DC not a fan of pasta).

So please give me your favourite veggie camping meals

We aren't veggie, but do things for dinner like risotto (the Aldi packet one is v good), egg fried rice (with packet rice), spanish omelette (tinned new potatoes), barbeque (pick up veggie sausages or do veg skewers), curry (jar sauce, quorn, packet of peas, packet rice).
It does depend a bit on the local shops and if the campsite has freezer/ fridges you can use.
Would your dc eat noodles? Those make life very easy as you can just leave them in boiling water to not take up a ring

veggie sausages and beans (you can get tinned veggie sausages here)

tortilla pizzas (place the tortilla in a pan, and then when it is 'bubby', spread tomato sauce and cheese on top. Let the cheese melt and remove from pan) - you can get wraps from the same place as the sausages if you wanted to order them together.

I don’t think there’s any fridge/freezer storage we can use at the site, but i Imagine if we wanted any meat substitutes I could just go and buy enough for one night. One DC will eat noodles the other won’t. The one who won’t could be Persuaded to eat pasta though.
I never thought about using wraps as pizza base-we use naans regularly but I’m sure wraps would go down well.

We aren't veggie, but one of our 'quick &easy' meals that could be adapted...

  • flavoured rice pouch (we like the Mexican one)
  • peppers, tin of sweetcorn, finely chopped carrot
  • protein (we use chicken or pepperoni, you can use appropriate substitute)

Fry protein and veggies, add rice and a small bit of water. Cook for couple of minutes.

Takes 10mins to prep, similar to cook, and one pan to wash up. DH will eat it from the pan if he's by himself, not when it's the whole family.

Don't forgot Smash!
Packet soup, add pulses, tinned sweetcorn, tomatoes etc.
Fry cooked rice with veg, egg, vege sausage etc and seasoning.
Fry up?

Baked beans! Jazz them up with onions, peppers, Cajun spices, and simmer down to nice and thick. Yum.

How about veggie chilli, baked sweet potato is good if you have a fire. Halloumi and veg skewers, we also eat a lot of pancakes when camping-can make sweet and savoury versions with cheese and mushrooms and veg etc.

Ready made pancakes can be filled with cheese and tomato or sweet fruit
Fruit or veg skewers
Falafal and hummus wraps
Can you buy a coolbox to store food in. What cooker will you use.

Halloumi keeps fairly well for camping (although we'd normally eat it with pasta).

Second wraps as a carb, saves cooking pasta etc. Boil in the bag rice is useful as much less mess.

If you are allowed real fires, you could do jacket potatoes in the embers. Tinned potatoes can work well, although they do taste different.

If you eat cheese, tortellini and pesto. Aldi sell ones that don’t need refrigerating.

We take the individual pots of porridge for breakfast (just add kettle water).
We also pack those prepackaged pain au chocolats. Fruit.

Lunches we tend to do super noodles/beans/scrambled egg/veggie sausages.

Evening meal - fajitas / quesedilla / burgers in buns / a curry (pre done at home and taken frozen so acts like a cool block in the chilly bin.

We do veggie fajitas. Onions, peppers, baby corn etc fried with packet fajita seasoning.

Serve with tortilla wraps, grated cheese, avocado/guacamole, soured cream etc. It's an easy dinner for the first night.

We take food for two to the three nights and never use fridge/freezers. We take two chilly bins and do a mix of frozen and fresh stuff in both so the frozen stuff keeps the fresh stuff cold.

If the DC who doesn’t like pasta is just dry pasta then fresh filled pasta could work? It boils so quickly (like tortellini stuff) a dollop of stir in sauce and job done. We do that quite a bit for camping. One pan all day breakfast is good though - big big frying pan, veggie sausages, halved tomatoes, mushrooms (one of mine will, one won’t) then crack eggs around and cook it together. Bread or rolls to dip in the eggs. I’ve got a really good camping cookbook downstairs I’ll look through it in a min and get some more ideas for you.

We also fry slices of halloumi in some sweet chilli sauce and serve with salad in burger buns or baguette. It's quick and easy and halloumi should be fine in a cool box for a couple of days.

If you take a frozen veggie chilli or curry with you it can defrost in the cool box and be dinner for night 2!

Couscous also a good alternative as it doesn't need a pan.

Couscous is a great suggestion. We add sweet chilli sauce, fried veggies, and chorizo to ours.

We use wraps too sleepismysuperpower1 but fold them over into calzone so the toppings don't fall out as easily.

Also....tinned veggie chilli (stag brand is good and in most supermarkets) then wraps, some dips (jarred long life sour cream from the crisp aisle are fine) and some grated cheese - lovely meal with minimal coolbox space. And just freeze everything - milk, wine, etc - keeps everything else you are taking so much colder for longer and don’t let people open your coolbox too much. Pack loose use in any gaps. I get 4 days out of my Coleman extreme coolbox with that method.

This is a fab little book if you can get a copy and loads of adaptable to veggie recipes. Annie Bells ‘camping cook book’ is also good but quite meat orientated but good sweet ideas and breakfasts.

Smoked extra firm tofu is delicious! It tastes like bacon and comes vacuum sealed so you can take it along to eat later in the trip. Love it with rice, onion, pepper and tinned tomatoes.

Would the non pasta eater eat gnocchi? Made with potato, you can buy them in vacuum packs in the pasta aisle. Advantage over pasta is that they only take about 3 minutes to cook, you can then put the same sauce over them, Parmesan etc and ready to go.

DP has a double ringed gas cooker I believe. And he’s sorted out a fire pit I think. Lots of good ideas though so I’m feeling better about that. Thank you!

I don’t think I could persuade non pasta eating DC to fry filled or gnocchi (won’t touch ravioli even in sauce) seems to be a texture thing rather than the taste. But the rest of us will, Ive never seen shelf stable filled pasta though so I’ll have a look for them next time I shop!
