Help me compile a list of veggie camping meals

I need some inspiration. I’m not one to camp usually but DP and DC go all the time and have finally persuaded me to join them. DP says they usually eat out all the time when camping and just take snacks. We can’t really afford that right now so need some easy camping meals that aren't just pasta (DC not a fan of pasta).

So please give me your favourite veggie camping meals

Aldi, Lidl and Tesco do the long life filled pasta in vacuum packs - it’s where you’d find the gnocchi and usually with the pasta sauces and so forth. Aldi’s is very good!

Make and freeze something like a chilli at home. Stick it in a cool box as you leave and it should be good to heat up the following day, especially vegetarian.
The packets of microwave rice can usually be heated in a saucepan which would reduce your cooking time.
Although my "can't be bothered with the hassle" camping food would be fish & chips one night and pub the other!

You can also pan fry gnocchi which gives it a lovely crispy on the outside, fluffy on the inside texture (no need to boil first). Lovely with garlic and herb philly stirred in, and you can fry courgettes and mushrooms in the pan as well

I usually take a couple of things I have already cooked like a chilli and a curry. One defrosted for the first night and one frozen for the second night.

You can buy packet mixes (Holland and Barrett a good shout) sausage, falafel etc mixes which you just add water and/or egg too which work well if cold storage is an issue. I tend to freeze a meal for the first day of two. Instant mash, veg sausage and beans is a perfectly adequate meal! Also flat breads, falafel and salad. The Aldi packet risotto already mentioned is great, s are cous cous and the flavoured packets of ready cooked rice and grains (they are aimed at microwave but can be warmed in a pan).

Quesadillas / Burritos:
Packet of soft tortilla wraps, cans of refried beans, cheese, mashed avocado, sandwich two together or fold up and heat in frying pan.

Kebabs of halloumi, mushroom, courgette etc, on BBQ.

A BBQ Wok or tray with holes in is useful for BBQ-ing veggie stuff.

Or make a foil parcel of cut up veg such as courgettes, peppers, red onion aubergine etc, bit of olive oil, garlic, herbs. Seal parcel with room for steam, and cook slowly in the BBQ with the lid on. Crusty bread, cheese.

You can hear pouches of microwave rice quickly in a pan: empty out into pan and add a little water.

Big hearty cold salads of tinned chick peas or cannelini beans , chopped pepper, chopped tomato etc. With crusty bread and cheese. Tin of hot soup to accompany if there needs to be something hot. But not unless you have a good table for the kids to sit at, they spill cereal, soup and drinks a lot on wobbly camping furniture, it does my head in.

Packet cous cous is a good stand by, hot or for a salad.

Tinned veg chilli with microwaved rice as above. Lidl’s bags of grated cheese are good value and cut down campsite work and washing up.

Since going mostly veggie we have replaced our trad morning bacon butty fry up with thinnish slices of fried halloumi.

I prefer it now, for a hit of greasy saltiness Grin

One pot risotto if you all eat rice? Pop your risotto rice in, with water and stock pot, I add in peas, chopped courgette and butternut squash, add in a sprinkle of dried mint and finish with parmasan cheese. Just stir it a few times and make sure it doesn’t stick. Tasty!

Do you have any good Indian specialist grocery shops near you? Tins are your friend when camping. You can get tinned cooked lentils and other veggie specialities in tins, then jazz them up with a few fresh bits.

Turkish / Middle Eastern shops also have amazing tinned goods: that amazing aubergine dish, good butter bean stews etc.

Also tinned dolmades which make an excellent addition to a salad lunch, being filling.

Just the page I was looking for this morning. I've noted most of these - thanks! We would normally eat out a lot when camping but that's going to be a lot trickier this year.

We don't have much space in the car. The lads would take millions of porridge pots but to save space I take a Tupperware of porridge oats, some sultanas or other dried fruit and wee jar of cinnamon, maybe some honey to drizzle on top. It's fine just done with water, only takes a few minutes in the pan. If you have milk to add it's a little nicer. It all gets gobbled up happily either way and saves packing space and waste compared to instant porridge pots. And money.

@sleepismysuperpower1 my order came from the supplier you suggested today. Now well stocked for veggie sausages, nut luncheon (will be made into stir fry with tinned water chestnuts, to be eaten with noodles), middle Eastern casserole (will be eaten with cous cous) and pumpkin soup (hopefully with some nice bread for farm shop, a walk down river or along the loch from the campsite). All twice over as we have two trips coming up. Halfway to having the whole menu covered. Campsite have confirmed take away meals available from nearest town. We look forward to supporting the local economy.

Not recipes but we freeze our food and have it in a cool box with the ice blocks and it would take a chilli or curry about 36 hrs to defrost. I freeze our milk also.
We love fried cheese sandwiches with crisps and salad on the side
