Goodness me, I can't stand when people plan the nicknames for the child who hasn't even entered the world yet. A nn should be organic, and maybe influenced by the character of the little one.

Due to tradition we'll be naming her after my DH's deceased mother who had a long, non-English name so her nickname is important to us as it will be used for everyday use.

May. Mei is a shortened version of a few Welsh boys' names (Meirion, Meilir) and is relatively common. It's pronounced may.
Mei is not pronounced May. It rhymes with Hey but not Hay.

If it’s pronounced not spelt differently it will be harder to explain that is all. Your choice what you call your child.

I would pronounce them both the same with the ey sound the same as hey, obey, prey, grey, ley if that makes sense.

Yes i'd go with this unless it's Mey maybe.
