I always think its odd when prounced as if it has a 'z' in the middle. Joez-ef.
Other than that only ever heard Joe-seph.

Its always pronounced Joe-seff here, with a soft s, in Ireland. I've only ever heard it pronounced with a z sound on British TV programmes, same with the name Denise.
