To not understand why my healthy (I think) way of eating isn't making me feel energetic and fabulous

AIBU to consider this is a healthy daily diet (not looking to lose weight as already a healthy weight). I want to feel more energetic and fabulous :-). Don't eat meat or drink alcohol. In my 60s, fit and well, very minimal stress.

AM
Smoothie with banana, kale, milk, peanut butter, avacado, skimmed milk powder, greek yoghurt
SNACK
Sourdough bread with peanut butter
MIDDAY
2 egg with onion, peppers, cheese and a mixed salad with olive oil dressing
5PM
Salmon with salad or brown rice with prawns and lots of vegetables and spices

What is missing? Or not helping?

Too many. Carbs are not a good thing. All carbs are heavily processed and refined, and have minimal nutritional value. You can get energy from them, certainly. But you could say that about red bull. Doesn’t mean it’s good for you.

Cutting out carbs is HARD. It’s inconvenient, makes it nearly impossible to eat out or eat anything quick or easy and can make eating feel very joyless. I don’t like it and can only do it sporadically. But I feel a thousand times better without them. They have nothing you need and are not a natural food group. There’s nothing to recommend them but popularity and tradition. We are not designed to survive on them. (But we do, because it’s easy).

So much nonsense in this.

I eat 'lower carb', I eat around 70 to 100g of carbs a day (not today, today involved bacon frazzles and some chocolate)

Carbs are things like beans, legumes, vegetables, milk etc, as well as fruit, grains, starches etc.

All containing nutritional value and excellent fibre.

Someone can eat double the carbs I eat and have a perfectlly healthy diet.

Don't understand how these ant-carb fanatics aren't chronically constipated. Don't understand how anyone can afford to eat giant slabs of meat daily either.

Beans, legumes, nuts, brown rice, quinoa, oats and root vegetables are perfectly healthy carbs, and more importantly, cheap.

Is OPs menu what she eats every day? This suggests someone who sees food as fuel.
I couldn’t eat substantially the same day after day nor miss out a midday meal. I’d worry that I’d get a stomach ulcer, and waking up during the night with hunger pangs. Nor could
I eat sweet stuff for breakfast.

Food is to be enjoyed. I couldn’t be obsessing about it.

Much prefer the Mediterranean style of eating with the emphasis on taste, quality and wide variety enjoyed with a nice glass of wine.

A tv history programme last week in which the presenter was in Puglia walking through a market with stalls with large variety of vegetables, fish, meat, cheese all fresh and all locally produced. None of our supermarket crap.

How could you not eat healthily when you have access to such varied nutritious food?

Wow! I hadn't expected so many responses - thanks to everyone who's taken the time to respond. To answer a few questions - no idea how many calories I eat as don't count but I'm certainly not aiming for low calorie or to lose weight. The 'fabulous' comment was somewhat tongue in cheek but I would like to feel more lively though I'm not fatigued or ill but could be more active, could drink more water.

About the smoothie for breakfast. I consider this full of goodness and I like to drink it. Although I like oats they give me stomach pains and I couldn't face eggs etc first thing. I could eat toast but wouldn't consider that was nutritious and a good way to start my day.

I dont deprive myself of foods - if I want cake, chocolate etc I have it but generally don't buy it so its not in the house. Might have it when I go out for a coffee. I haven't eaten meat for decades and won't be starting but perhaps need to ensure I'm getting enough from other sources. I could add beans, nuts and seeds to my meals - had forgotten about them.

You say you are already fit, healthy and unstressed? I'd settle for that. A good diet will hopefully let you continue like that. It's not going to make you into superwoman. It sounds a bit like you've been buying into influencer bullshit claims about how amaaaaazing they feel!

Quite. Honestly the perfect is the enemy of the good here.

This 'peaking and crashing' sugar levels is completely overstated.

Its normal for sugars to increase after eating and a bit more depending on what we've eaten. It doesnt suddnely mean people cant get off the sofa

Of course there are, but I doubt they are living on the same diet as OP! They will have properly tailored diets to give them energy.

Where are vegetables and fruit? Apart from the banana which is high in sugar so are grapes so don't add any.
Do you have 2 eggs and cheese everyday or is this just a sample menu? Cheese everyday not good and no more than 1 egg a day. Are you drinking enough water and tea and coffee without sugar?

There’s nothing wrong with grapes and bananas and of course you can have more than 1 egg a day or how the hell would you ever have scrambled eggs?!

This is simply not true. Sourdough has a slower blood glucose effect than standard bread and peanut butter is fat and protein NOT high carb which has the effect of slowing blood sugar rises. Having a carb based snack is not a bad thing! Eating plain white processed bread with jam - definitely going to spike blood sugar. Sourdough toast and peanut butter- satiating, nutrient dense and delicious.

all sources of protein. Assuming OP is eating decent portions which as she isn't trying to lose weight she probably is, this is plenty of protein. Honestly, how can you look at that and say 'very little protein'? It baffles me

Too carby and not enough protein. I would fall asleep after that breakfast and then feel
hungry after lunch/dinner. I also suspect it’s not really enough calories.

I could not agree more. I suspect a lot of the kneejerk 'Not enough protein!' responses are reacting to OP saying she doesn't eat meat.
