Stuff you recently discovered that actually freezes really well...

...or stuff you now freeze that has been a game changer

I'll start:

  • Pesto portions. Dolloped in little tin foil parcels
  • Ditto cream cheese (only good for cooking with once defrosted tho)
  • A Fecking squeeze of fresh lemon 😂 for those poxy recipes that demand it
  • Single portions of mashed potato - freezes exceptionally well with double cream and butter. Game changer for single living.

I mash up a fruit mix for topping my porridge - two weeks worth. Freezes perfectly in small containers that last for two/three days when defrosted overnight in the fridge. That's berries, kiwis, avocado.

Milk in ice cube bags, for emergencies! Just pop as many out as needed and either straight into coffee or tea, or leave for a bit to defrost, tastes perfect.

Celery - useful for mirepoix, dice before freezing.

I can't seem to buy single unwaxed lemons so if I buy a bag I zest and juice all of them and freeze what I don't use.

Fresh ginger, peeled and sliced. I take out a couple of slices and run under warm water from the tap to defrost them instantly to cut up and add to whatever I’m cooking.

Also if I buy a bag of sweet potatoes I cube and roast the lot and then freeze them to add to various meals.
And (more niche) I make tamarind purée by soaking and sieving the blocks you can buy, then freeze blocks in ice cube trays.

Sliced chili (as mentioned above),sliced peppers, chopped onions, soft fruit, just about any kind of baking (including iced cakes), home-made veggie burgers (make double quantities), quiche, home-made curry and pasta sauces, home-made veggie bolognese and lasagne, gluten-free and regular bread (freeze whole loaf and then take out slices as you need them), fruit crumbles, home-grown broad beans, tomatoes (easy to de-skin when frozen if you cut a small slit in skin then sit them in hot water for a few minutes), large containers of milk.

Things that don't freeze well in my opinion: home-grown broccoli, cauliflower, green beans ...

Overripe bananas (if you're going to make banana bread or similar with them, but haven't got time to make it right now).

Flour if you don't bake often. It can go off otherwise.

I puree and freeze yellow stickered mango in mini muffin trays to add to natural yoghurt (much cheaper and healthier than buying flavoured yoghurts.
I buy big blocks of cheddar which I grate and freeze. It can be used from frozen for macaroni cheese, cauliflower cheese, lasagne, etc.
Stale bread can be broken down in a food processor and frozen as breadcrumbs.
Most vegetables can be chopped and frozen and then added to a recipe from frozen.

I just buy frozen whole leaf spinach. Obviously if it's for salad then this won't work.

Garlic cloves. I buy bags of fresh ready peeled ones from Ocado and then just grate on a microplane from frozen.

Frozen leftovers is my favourite way to put meals together. Usually have lasagne, rice, mashed potatoes, gravy, fresh herbs, ginger. Chives was the latest addition to my herb bag, I only buy them when I'm making potato salad and invariably I don't use a whole bunch.
If bananas are not going to be eaten in time then they are halved and a lolly stick put in them before dunking them in yoghurt and freezing. Saves me from having lollies when I have a sweet craving. No cake in the freezer currently <sad face>
