Will we get sick?

Baked a cake. Eggs had been in the fridge previous. Since found out that the eggs I used had actually been sat out on the kitchen side from 11am-6pm when I used them for the cake. Will we get sick??!

American eggs are washed which removes the outer layer and allows bacteria to enter the shell. UK eggs aren't washed.

I had some with a best before of Nov 6 for tea and they were perfectly fine!

AS someone said, in the US they wash they eggs, which destroys the protective covering, makes the shell permeable to air, and s they can go off.

keep chickens so my eggs aren’t date stamped and they’re not kept in a fridge. I generally use eggs that up to 4 weeks old without any problem although I crack them into a small dish to check before cooking with them.

tat was absolutely normal up until salmonella, and then we were suddenly told to cook eggs until the yolk was solid, never eat raw egg (no royal icing, no licking the beaters when cake making), Government propaganda tried to say "but we're so much better off now eggs don't go bad". But it was a damned sight easier to just crack eggs individually, and if it didn't smell you knew it was fresh. Not have the whole lot possibly infected with salmonella.

Glad we've got it sorted and we can go back to feeling secure about our eggs.

I’m in the UK. British lion eggs actually say on their website thing egg info to store in the fridge as it keeps them at a constant temperature and keeps them fresher for longer. I read somewhere that eggs should be discarded if left out for longer than 2 hours after refrigeration so I panicked! It said about salmonella.

Eggs are fine outside the fridge.

You don't get food poisoning from foods changing temperature. The only exception is leaving hot food to cool slowly at room temperature, as leaving already contaminated food standing out luke warm for hours will create an ideal brewing ground for bacteria. Eggs changing from fridge temp to room temp to baking temp, though, is not a problem.

If an egg is off you will know immediately when you crack it. If it doesn't you can use it. People used to keep eggs for months when hens weren't laying - it is seasonal.

However, as they get older they change composition a bit. Apparently older eggs are better for meringues.

Dont keep the packet so never consult use by dates.
Never in my life had a rotten egg.
Never had any problems baking or cooking with cold eggs.
Never had food poisoning.

where do you all put your eggs? On the side or in a cupboard? And what do you do with the egg holder shelf insert thing in the fridge?

My DD has severe emetophobia and worries about eating everything. I'm not saying you do OP, but I do understand what it's like to worry about getting ill from your food.

You'll be absolutely fine. I take my eggs out of the fridge before I bake with them.

Personally, eggs in fridge in egg box at home. Pointless little egg holder tray thing gets ignored/chucked in a drawer/bin. At work, the eggs are just in their trays on the shelves under the counter. Literally doesn’t matter. Room temp as they bake better.
