To suspect vegetables are crucifying me?

From a family of IBS sufferers, mine has worsened in the past few years.
Always loved veg, eat it every day, and have generally aimed to consume the low fodmap variety to be on the safe side.
Had tests, no allergies, other issues, etc.
I did the FODMAP exclusion last year and had mixed results, although followed it to a tee.

Recently had another bad bout, lasting a few months so kept a food diary.
I observed the following within a day or 6 hours of eating
:
Potato, carrot, green beans with chicken breast - lots of uncomfortable gas.
Mixed low fodmap salad with tuna - less painful but still bloated later.
Cheese on toast - no symptoms.
50g of penne pasta with peppers and tomato - no symptoms.
Roast with root veg and stuffing - raging hell.
Homemade coleslaw with cabbage, carrot, radish and cress - fartsville.
Small Co-Op margherita pizza with olives, spinach and chilli peppers - no symptoms.

Cutting a long story short, I can conclude that I am safe with tomato, spinach and various peppers. I am safe with some wheat and lactose.
I simply can't eat other low fodmap veg without issue.
Most people I read about say gluten, dairy or high fodmap veg caused their issues but I seem to be an outlier. There is so little veg left that I can comfortable eat that I am a bit fed up. Is this even enough to get by on?

So much messaging about how veg can be consumed in great quantities but not for me. I feel a bit shortchanged.

Since I can almost eat anything in small amounts, I am not going to exclude anything other than sprouts and onion.

With IBS it's best to check out medically there is nothing else going on too. I was having digestive/poo issues in my late 30s, thought it was stress or food intolerance and I had endometriosis all over my bowel and an endometrial cyst.

'Apparently' I don't have IBS or IBD. I don't have a pancreatic enzyme deficiency either. I had one cycle of chemotherapy last year and my gut was completely wrecked by that. I have had a colonoscopy and it seems that apart from some mild diverticulitis my gut is fine!

I don't like many vegetables, but I used to love salad, coleslaw, fruit, and a few vegetables. I cannot now eat raw fruit or vegetables. I can't eat peas or sweetcorn, nuts or seeds. Cabbage is iffy, as are peppers. I have to be extremely careful about how much oil or fat I eat. I seem to be fine with carbs of all kinds. I'm also type 2 diabetic and used to manage it quite well with meds and diet. Since my diet is now a LOT of carbs with protein but very little fruit and veg and not much in the way of fats or oils, it really isn't doing my diabetes any good at all!

My whole life is governed by how my tummy feels, whether I think I'm going to be able to be away from home for more than an hour, where the nearest toilet is etc. I used to swim twice a week but there are some days when I am so worried about having an 'accident' that I have to miss it. We have been invited to my grandson's birthday tea on Saturday and I'm already worried about whether I'm going to manage without using the loo, and I know we will have to leave early. They only have one loo, it's on a half landing and the stairs go directly into the living/dining room so there is little privacy and noises/smells will be very obvious.

We got home late yesterday and my DH suggested getting fish and chips on the way, as it was a bit late to cook. I had to say no - I had had a bad day and I knew I wouldn't be able to manage that much fat.

All I want is to know what I can eat to be healthy - all the things I 'should' eat I can't eat. I feel for you OP!

Since starting this thread, I have observed that when my mind is expecting a reaction, i get one. For 4 days I had my mind on other issues that were really pressing, and during that time I ate anything I desired and had no effects whatsoever.

I am a bit gobsmacked.
It is as if, when I observe my bowel, it acts up. And when I ignore it, it doesn't.

I have no idea what that might suggest, but will remain aware. Thank you to everyone who has contributed a comment.

I can relate to the bowel issue being something that only occurs if you think about it.
During emergencies or times where I’m fully engrossed in other things I don’t even think of my stomach and I don’t have any issues.
On the other hand, if I go out to dinner with one particular friend who when I went out with her a few years ago I had a bad stomach all evening and had to visit the loo many times, every time I go out with her now I get the violent runs and have to leave her sitting at the table alone for lots of time as I’m stuck in the loo. The mind is a powerful thing.

I can't tolerate a lot of veg which is a shame as Im vegan. I find if stuff is cooked to a mush it's better but anything undercooked (which is almost always is in a restaurant) is terrible.

Are yiu having gravy or saice with the veg? You could be gluten intolerant

I noticed that nearly all of the items you listed that cause you problems are very high Fodmap foods… just in case you hadn’t realised x
